- Fabrique, one of Sweden's most popular bakeries, is known for its cardamom bun, a crispy, buttery dessert with a unique shape. Insider’s Lisa Paradise asked head baker Oscar Erlandsson to send a few buns, plus one key ingredient to her Brooklyn apartment so she could try to recreate it herself at home with no recipe, only a few tips and tricks from the chef.

Try putting the seeds of one cardamom pod with your coffee grinds when making coffee, you will be impressed with the flavor of your coffee.
You need to proof the dough 2 times. First proof (45-60min) before you roll the dough out. Second proof (45-60min) after you roll and shape the buns. That is how you get the size and fluffiness. Also forgot to brush them in eggwash before baking them or with sugarwash directly after baking. That is how they get the shine and bakerylook👍🏻
Yup. That’s the two crucial steps she didn’t do - and that is why the look small and different. And probably taste different as well.
Of course, you can make them at home. Most Swedes do that. Just essential baking knowledge to have.

Here in Sweden so is it in most recipes that you use egg wash to coat the buns slightly to give the bun that golden brown exterior before you bake them. That'll give the bun a more golden brown color as a result.
Also we use the infinitely superior fresh yeast, rather than dry yeast which is much more common in the US. Now that I think of it, I haven't seen anyone in Sweden use dry yeast, I don't even know if stores normally sell it here.
Did I miss the step where she activated the yeast and let the dough rise or fold it a couple times to make it flaky?
Also it needs some kind of wash for it to get golden.

Cinnamonbuns, cardemonbuns, vaniliabuns, nutellabuns, you name it. You can add pretty much anything in the dough/or filling😍

I love cardamom in Indian sweets and drinks, but have always been reluctant to add it to a western baked good. I think I may try this out.

That cardamom filling is not thin enough and not evenly spread.. I bet it'll taste really bad just eating it like that with some baked dough 😅
I've never even had cardamom buns. Like cinnamon buns, chocolate balls, semlor and hallongrottor are wayyy more common in sweden and i wish they got a bit more love
I don't think cinnamon buns could get any more love, surely everyone loves cinnamon buns! Tho maybe they're Danish and the Swedish kind is different?
I have made these at home mine turned out different but the recipe was different than this one... still delicious but mine turned out texturaly different and they were hard to form, though i had to make it with gluten free dough which might have changed its consistency slightly. A bit time consuming but still worth it, also make kruidnotten cookies another time consuming treat but more delicious than gingerbread
They should have really hired someone who atleast knows how to bake to do this video... just saying...

I REALLY doubt, that this lady has a "baking degree" (yeah...that's how she called it in the previous video where she visited the bakery in NY).
The way that she acts during the whole making of the buns is just a reeeeeally beginners skill. No doubt on it that she's just another wannabe social media foodie...🤷🏻♂️
