- Chocolate Covered Peanut Clusters
48 ounces Chocolate Bark
24 ounces Semi-Sweet Chocolate Chips
2 tablespoons Coconut Shortening or Vegetable Shortening
4 pounds Salted Cocktail Style or Dry Roasted Peanuts
Melt chocolates with the coconut shortening in a double boiler until smooth. Pour in the peanuts and scoop out onto baking sheets lines with waxed paper. I used a 2-tablespoon scoop. Let harden and pack into airtight containers. No need to refrigerate. Last at least a couple of weeks if not longer.
Chef Amy I was cracking up about the part of your Great Grandmother banging those pans because she was mad with no help.. My great grandmother was the same way but was mad at me for not helping.. I was only 11 yrs old when she would call for me in the kitchen to help but I would run and hide because i was scared I might mess something up.. Lol.. So I loved that memory you shared. So sorry for your loss of Uncle Harry. We lost my husband at Christmas time in 2017. We always do things that bring back things he liked about the Christmas season. Even the little ones who were born after know him. Great video. I made this for many years. When I had extra chocolate, I'd use whatever cereals we had on hand to use up the rest.
I made these today sugar free! I finally found sugar free. I 1/2 these recipe. Peanuts are ok. It made a lot. Made them for my hubby and He seen them his eyes popped out like WOW! He wanted one NOW. I said let me put them ALL lol,in the garage fridge to set up. With in an hour they were edible and they were good especially for being sugar free. I liked them a lot. My daughters here and has bagged up some to take home. Her dads watching how many 😮 lol I’ll make them again for sure. Thanks so much for posting this video.
This is my 2nd attempt at commenting. This is twice I’ve lost my comment on your videos. Firstly, I’m so very sorry about the passing of your Uncle Larry. I had sincerely prayed your Thanksgiving and Christmas holidays would be sadness and tragedy free this year. I guess the Lord had other plans. Prayers for you and all of Uncle Larry’s family during this time of grief. The chocolate covered peanuts look so good. Bet that put a smile on some faces. I don’t blame your great grandma Worsham for banging around the kitchen because she had no help. Hey Amy! So sorry for the loss of your uncle Larry. I just lost my uncle Jimmy a few weeks ago on Dec. 7th. It's been a tough time especially it being the holidays as well. This is the easiest candy recipe I've ever seen! I just wrote the recipe down on one of my pretty Christmas recipe cards to make up for gift giving during the holidays. I make peanut brittle wirh Spanish peanuts. I think they might be my favorite!!

Well I dearly love coconut. I do believe it would. If you make them please let me know how you like them with the coconut.
I made a version of this and it makes any ideas on how to store them and how long they last
I store them in airtight containers like Tupperware. No refrigerator needed. They last at least a couple of weeks. Maybe longer but mine get eaten before too long to know😄

Sorry I said 4 pounds. I keep saying I'm gonna quit saying how many in a video because I mess up. I looked at the container and it is 1 pound containers. So 2 pounds😑
