Wow!! But first I have to preface this comment. My ex was Italian and got me hooked on risotto, it is literally my favorite thing to eat but as many times as he cooked it for me I never paid attention. I've tried box risotto during desperate times but realized I needed to learn how to cook this myself. You really came through for me with this recipe. It was easy to follow and my finished product was absolute heaven. Thank you Billy 💜
I really like adding stock as much as it takes until al dante. You also mentioned the same thing thing in the recipe clip. I didn’t know we could reheat it. Thank you for the tip.
if you use orzo you're not making a risotto, because orzo has not enough starch to get it creamy. Italians cook orzo the same way as risotto but the result is different. They call it "orzotto"
Thank you again. You answer all the questions I have. First time I made it, it got to the point of congee hahahaha I have no culinary skills to speak of. You're a great teacher. I will attempt this again.
for a healthier, vegan option I soak 1 cup raw cashews in water, strain then blend with your risotto stock, add nutritional yeast and salt/pepper. Super creamy. That's my "heavy cream"
@@250Pants it’s good with a “cauliflower cream” too! I like to cook down some riced cauliflower until it’s tender, and then blend with a little unsweetened almond milk. Sooo good! I use this thick cream base for Alfredo, and cheese sauce bases all the time. It’s delicious without any added dairy.
looks delicious! i've always been too intimidated to make risoto, but you're making it look easy! I will definitely need to give this a try now. at what point would you add vegetables to this? i'm thinking asparagus or mushrooms... yum.
I would caramelize the mushrooms with the onions and get a really nice brown on them and then add asparagus in with the last ladle of chicken stock so that it stays firm. You got this!!
So if I were to use Aborio rice are the amounts still the same? Looks so good! I've made 3 of your recipes so far, short ribs are next. Thanks so much.
This was very helpful! Going to veganize it, but wondering whether to do home made veggie broth or store bought. Is it weird to bring risotto to Christmas dinner? Lol, looks so good!
My house does not have alcohol in it, so what can I replace the wine with? This recipe looks amazing and I definitely am going to try it. Thanks again for an absolutely wonderful dinner idea. I cannot wait.😍👍🥰🤗
Nice, I'm looking forward to making this but thinking I'll add some capers to the risotto and serve it alongside a seared salmon filet and finish with a light lemon butter cream sauce 🤤
One of my favorite things to cook & so many different variations & options . The first few times i made it wasn’t exactly wonderful but practice makes perfect with risotto. Is it traditional to add butter at the end or is that an American addition?
I going to try making Risotto for the first time this week, just going to use this video as my instructions. Hopefully I get it down cause I really want to do Lobster or Crab Risotto
My partner makes the best risotto and I'm so nervous about trying to make it for him. Thank you for sharing, I think I'm ready to give it my first shot 😅
Me neither. When it’s al dante, turn off stove. Add butter and parmesan. Close the lid without stirring. Wait about 2-3 min. Then open the lid and stir it. Done
So after adding the wine u said continue stirring with a wooden spoon...any particular reason for that? Also does it matter what kind of wood?i use a beechwood spatula
Hi Chef, new subscriber here from California. Was the heavy cream in place of the butter I see other chefs put in at the end Chef? Thank You for this tutorial, this dish scares me to death to try lol.
What's up my friend, thanks for the sub. Yes, essentially butter is whipped cream so I wanted to try and make it super white with the cream! You can absolutely sub out the cream for butter.

This looks delicious. I have a one year old picky eater and I want to try making this for her. Do you know if this dish is toddler friendly since it has wine in it? Or should I omit the wine altogether? Thanks!
I know you commented a while ago but just in case anyone else was actually looking for an answer... all of the alcohol in the wine will cook out during this low and slow cooking process. The wine is added for flavor. Totally safe for kids too!
Okay I have questions regarding the Risotto I see that you used a wine bottle I forgot what it’s called anyways is there any other way I can use without wine because I’m not allowed to use wine of any kind
I’m not a nouveau cook, but I’m still haunted by making risotto LoL. I have the Arborio rice and the chicken stock, all the ingredients, but, I am still hesitant. I ALWAYS love trying to cook new things, but this is one I can’t mess up. On a personal note, I cook for my mother who has stage IV cancer so if it doesn’t come out right, I need to scrap it all and make something completely new and different and by then, she’s lost her appetite. Ohh I love risotto but it’s daunting as hell!!!
Arborio rice to make Risotto. This guy gives some good hints but just makes the basic rice without mushrooms, chicken, or other things you can put in it. Andrew really likes it but like I said, I’ve never made it. Sounds good. There is a recipe on the rice container.
all good until you added whipping cream. no need for it. just use cold butter and parmigiano off the heat and it will become creamy and tasty. also arborio rice is like the "weakest" for risotto. try carnaroli or vialone nano, they have more starch and firmer texture.
@@s1lv3rr : Peanut butter is good. I put fig jam on a piece of toast. Curry, raisins, with mint leaf garnish is also excellent. But use less cheese. It's all a matter of personal taste.
Brilliant recipe. Very tasty and a winner. Risotto, please learn how to pronounce this word correctly 🙏😃 Thank you. I'm making this again tonight. Blessings from the Blue Mountains NSW Australia 🇦🇺🇮🇹

Fantastic!!

Tried it without the cream because I didn't have any and still came out bomb
Thanks for sharing this beautiful dish.

Every time I forget how to make this I come right back here
What if you just add all the stock at once and cook the rice until done? So much easier 🤔
it doesn't go as creamy and just becomes stodgy rice.
Molto Delicioso! Gracie
chef, is white wine safe for kids? specifically a 10 year old?
Do we need to wash the arborio rice before hand? Can I have the recipe in grams?
What’s difference between using shallots vs yellow onions for risotto? I’ve used shallots before, but haven’t tried the onion. Thanks in advance!
Less bite

What is chicken stock ?
stock made from chicken.
Is there a substitute for the white wine, I'm underage😅
I am vegan is there a sub broth you would recommend for this dish?
actually real italian risotto is made of vegetable broth so you can just put some onion, carrots and celery
