- How to make Nougat with marshmallow? I have been using this marshmallow nougat recipe for years. The nougats are soft, chewy and so delicious. You can also make more and sell them to make some extra money.
Tips: use juicier and softer dried fruits.
Prep Time: 10 min
Cook Time: 20 min
Total Time: 30 min
Yield: 60 servings
Ingredients
40g butter
200g marshmallow
100g milk powder
100g almonds
100g dried cranberries
Instructions
Bake almonds at 160°C for about 10 minutes (oven middle rack).
Place butter in a non-stick pan. Cook over low heat until the butter is melted, stir occasionally with a non-stick spatula. Add marshmallows and stir until the marshmallows are about 80% melted. Add the milk powder and mix until the milk powder is not visible. Turn off the heat and mix in almonds and dried cranberries quickly until well combined.
Quickly put everything into the nougat tray mold and press gently. Cover the nougat with a piece of baking paper. Allow the nougat to set in the refrigerator for about 1 hour.
Turn the nougat out onto a cutting board. Cut the nougat into small rectangles. The nougat is now ready to eat! Wrap the pieces in rice paper/baking paper/candy paper so that they do not stick together. Store the nougat in an airtight container at room temperature.

Why am I watching this at 3AM? I’m allergic to nuts... and dairy... and I’m a diabetic. 😂 Oh well, I’ll make it for my family, they will love it! Thank you for sharing! 🤍
You can change the nuts to dried fruits like dried strawberries, mangoes etc. Hope your family love it! 😊
@@Marecipes what happened if i didn't use milk powder?
@@ggi1315 the nougat will be very sticky😊
@@Marecipes oh i see.. Thank youuuuuu
Not the only one
Thank you!! I made this, turned out great. I used smashed dried strawberries, I only had oil, I heated up some crushed mixed nuts to release the flavor, mixed it in with the marshmallows and praline flavoring (coffee style) and pressed it out into parchment. What fun!! Next time, I will add honey to sweeten it up a tad. It's like a fluffy Taffy. Thanks!! So simple!! tyvm
This is a childhood treat for me. Now I can't find it anywhere. Thanks for sharing how to make it.
Thank you for the recipe!

Thank you for the recipe. I made this yesterday, it tasted great but the stirring after the milk powder and nuts really exercises the arm muscles. The cutting after putting them into the fridge, another arm exercise. Very simple and delicious!

Simple! Nice!
Roast almond.
Melt butter on low heat nonstick pan.
Add marshmallow to melted butter . stir until 80%melted and forms a ball. Add the milk powder. Mix until powder is well incorporated and no longer powdery. Transfer wax paper lined pan or silicon pan mold. Roll or flatten with desired thickness. cover with waxpaper. Let set in the fridge for one hour. Cut into desired shape.

Can I use coffee whitener instead of milk powder? It is very hard to find.
Deliciousness!!!
Wowwwww! I've made torrone before using the classical Italian method with minimal equipment but it required so much work and over 3 hours for me whisking the meringue, caramelizing sugar and honey, and mixing it all gradually together. It was a nightmare and I never wanted to do that again. This version looks so simple and quick in comparison! It never occurred to me that nougat could be made with melted marshmallows. I have to try it!
Is the final texture still quite chewy almost like caramel? I never liked the texture of marshmallows that much on their own although I love that more chewy nougat texture.
I just tried the recipe and it's awesome! I don't have nougat made with meringue side-by-side to compare, but the chewy texture and consistency seems spot-on! Wowwww! I am always going to use marshmallows from now on. What does the milk powder do? Is it mainly for taste or does it alter the texture somehow?
@@darkengine5931 Thank you for trying my recipe!!!!!!! and Happy to hear that you actually like it!!!!!!! Yes, the milk powder do affect the texture, harder or softer. 😊😊
@@Marecipes Thanks for the recipe! I am so happy to be able to make it with marshmallows now. It is so much faster and less tedious! With the milk powder, the one thing I found is that the end result has such a strong milky taste so I was wondering if I could cut the amount of milk powder in half next time without affecting the consistency too much to reduce the milky taste a little bit, or maybe add something else.
@@Marecipes I actually love the milky taste though! It reminds me a bit of panna cotta or Milky candy but with nougat texture which I think is totally awesome! But my wife is picky and tried it and she didn't like it as much having such a strong milky taste.
I’ll try, newer ever eat the marshmallows 🤞,good idea for the Christmas Eave desert
i love nougat🤩😘😍
Thank you 💜
Thanks for sharing with me I appreciate
Yummy 😋😋😋!!!
I enjoy to eat marshmallow & i want to try smething else.tq 4 the recipe
Thank you for the comment. Hope you like it after trying 🙂🙂
Good nice great fentasic super
Yyy my husband love nougat, have to try making it. Thank you for recipe?
Hope your husband likes it 😊
The nougat tray looks fiddly and cumbersome, although I can see the good idea behind it. Coat the knife with a light swipe of oil - vegetable or coconut. It helps to prevent sticking.
If you keep it longer in the fridge, it will be very easy to cut. That day i need to shoot before the sunset, I just put in the fridge for like 15-20 minutes, the nougat is still too soft to cut xD
@@Marecipes I purchased some rice paper and put it on the nougat (on top and underneath) and it made cutting it into bite-sized chunks very easy. :)
Can we put them in refrigerator more than 1 hour to get it more harder or it make them tasteless ?
we put them in refrigerator to make it harder and easier to cut into pieces 😊
This was an honest trial which resulted in making good nougat! She and us both know now what to do and what to not do. 👌🏻
Tip: Dap some oil on the your cutting tool’s blade using tissue before you cut each section as it is advisable to dust your hands with cornstarch and press down after spreading the gooey nougat, flip, tear off the parchment paper which was underneath the nougat in a pan and start dividing after it has completely cooled given 3 hours.
Method: Would be better to melt marshmallows on a water bath then mix in butter or white chocolate chips therefore you won’t need to add butter nor milk powder and sugar if you weren’t going to use sweet fruits just nuts.
Thank you for your feedback and suggestions! I appreciate your tips for improving the nougat-making process. I'll definitely try using oil on the cutting tool's blade and dusting my hands with cornstarch. Your method of melting marshmallows on a water bath and mixing in butter or white chocolate chips sounds like a great alternative. I'll keep all of this in mind for my next attempt at making nougat. Thanks again! 🥰🥰🥰

how long it can last whether it is frozen or stored at room temperature?
About 1-2 weeks. Finish it as soon as possible 😊
How months can we keep them in room temp..? And if keep them in refrigerator they still usble?
Usually, homemade food are recommended to finish them as soon as possible. I have never kept too long so I'm not too sure for that. Perhaps, could be a few weeks. Yes you can keep them in the refrigerator. 😊
@@Marecipes thanks dear friend😍
may i know where you buy the marshmallow? i tried once but the marshmallow being melt and not come in together
I used "Markenburg Large Marshmallows" 😊
My nougat is sticky and soft, is it that i put too much butter? Or the heat is too high? I saw this video after making it, so i did not follow the proportion of your recipe.
Nougat: *exists*
Vietnamese: it's free real *estate*
there's no gelitan in nougat, is the finish product bouncy like marshmallow? does the milk powder break up the gelatin some how, wouldn't it just be easier to cook the moisture out of marshmallow fluff it has no gelitan and is basically already nougat
it's soft and chewy 😊
Its because theres no Sugar
Will it become harder? It looks a bit soft.
You can reduce the marshmallow if you want it harder :)
Hi everyone. I want to ask for an opinion. Is it ok if I add a dried fruit mix for the cake? I mean, the one with raisin & cherry. Thanks in advance. Pardon my grammar
yes 🙂🙂 you can add any dried fruit to make this nougat, where are you from?
Suggestion: cut the block when it is ready solid to make the cutting process easier.
yes you are right 😊
Is there a way to make sure it becomes less sticky at the end, i only though of adding milk powder above the nougat??
Yes, you can reduce the amount of mashmallow to 190grams 🙂🙂
What Marshmallow did you use? It is kosher friendly?
Hi, I tried following your way of making and it turn out sticky. Would you able to advice me ?
Do you put in the fridge before cutting? If you put in the fridge for at least 1 hour, it wont be sticky to cut. Sometimes, ingredients you use do matter too. 🙂
Can i change the milk powder with something else? I don't really a fan of milk
I didn't use other things to make this before, I'm not too sure. 😓
Maybe u can try with horlicks?
What milk power u use?
Is it still sticky until we eat it? Is it cann't be hard after few hours ? I mean no sticky?
It will still slightly sticky and soft even after few days. If you want it to be harder, you can just reduce the amount of mashmallows 😊
This is my favorite. I will make some of this..but can i use raisins instead of dried cranberries?
Yes You Can! 😊
Thank you😊
Instead of butter can we use other thing
What do you call the mold that you use? I wanna get one 😊
It's Nougat mould 😊
Any substitute of milk powder ?
hm don't have 😊
i think white milk chocolate would work.
This is easier to cut if it's almost Frozen. I don't use not so dried cranberries or dry milk powder. I do use marshmallows and butter and white chocolate chips which can also be purchased that have no milk in them. I use dots candy and make the old jelly nougat that was always in my grandmother's candy drawer! You can add nuts honey any kind of dried fruit but I make it once a year as a copycat for the jelly nougats.
What is the difference between paflova and nougat .
What is the ratio of mallows and milk powder
if i put it in a jar, does it melt ? or does it have to be in the fridge at all times
It ok to put in a jar, it won't melt unless the place you put the jar is very warm. Keep it in the fridge if you want to keep it longer 😊
I use a large diameter pizza cutter when cutting bars products
Will those nougat turn hard if we keep in the refrigerator all time?
No, it wont 😊
Such a cute voice! What is the milk powder for? Is it the same as nonfat dry milk?
Thank you 😆 to make the nougat "firmer". I think they are the same, but I'm not too sure. We called it Milk Powder here.
What kind of powder milk
.thx
I use Full Cream 😁😊
@@Marecipes thank you
@@Marecipes thank you
Can I use coconut powder?
I didn't use coconut powder before but I think you can try 😊
If you do not want to induvizully wrap it I suggest that you roll it in milk powder and store it
That's a great idea! 😊
Marshmallows and dry milk mostly?
Hi Ms, where to buy the tray u are using?
I bought this online, you can try to search from online stores. 😊
👌💕
Purpose behind adding milk powder !?
flavour, texture, makes the nougat more solid.

Ingredientes
😄
Where did u get ur plastic container?
I bought it online 🙂
can we change the dried cranberries to chocolate chip?
I didn't try before I'm not too sure whether the chocolate chip will melt 😊
Why is my nougat so thick??
Where did you get the fun paper?
Do you mean the wrapping paper? I bought it online, just search for "candy paper" ~
Thanks for the recipe sweetie!
You're welcome, hope you like it 😊
if dont add milk powder , will it spoil the taste ? tks
yes, it will affect the texture and taste 😊😊
Hi what size is your nougat mold?
Should be 24*18.5 cm. You can make 60 pcs of nougat using this 🥰
What type of flour did you use please and thank you
It's not flour it's milk powder 😅
Put in the fridge freezer or just normal fridge?
just normal fridge will do 🙂
Hello i want to ask something why i want to melt the marshmallows its not like the video ?? and the textures very bad HAHAHA 😭😭 it is have a type of marshmallow for cooking only ?
hm I'm not sure. Maybe you can try changing other types of Marshmallow and try? If the same thing happen, maybe it's cause of your heat. 🙂
I see something crawling on the right hand side at 9:04 😱

Me too😂😂😂😂
Ihihihi it just an ant....
Can I add honey to this delicious looking recipe? Thank you so much 💐
Hi, I suggest not to because it might turn out very sticky 🙂
Shouldn't it be tough? Like non sticky at the end?
If you want it to be firmer, you may reduce the amount of mashmallow in the recipe as to your likings 😉
love the cameo of the ant .lol
My nougat stuck so badly to the parchment paper I can't get it off. I am bummed!
Did you keep in the fridge for at least 30 minutes? Keep it longer if it's still very sticky!
Oh yes, overnight in the fridge. It literally fused to the parchment paper. I couldn't get it off! I was disappointed, but will try again!

It's a one pan size induction hob and non stick wok or deep frying pan. The hob is very useful when you do a lot of cooking as they plug into a normal household power socket (UK)
Is it soft? Can we use this for hard nougat?
Hi, yes this nougat is soft and chewy. If you like it to be firmer, you may reduce the amount of mashmallow in the recipe as to your likings 😉
But is it okay if i recommend you something? It is better for me if the video shorter than this. Keep going! Your channel gonna grow more soon🤗🤗👍

I think the video is best like this. It shows actual time taken. If you shorten the video, the time taken is deceptive. This way, you know exactly how long this takes to make - and it's very quick!
@@alexandraabraham6698 Thank You :)

It was not a cockroach 🪳 it was 🐜 ant!
Still, your on a world stage...
No need for critters...
It would have been easier to cut it if she had cooled it in the fridge
