  • Dr. Chana Davis sits down with Food Science Babe, a food scientist, to talk about processed foods, and why "processed" is not a dirty word.
We have all heard it: "Eat whole foods, with five ingredients or less, and ingredients you can pronounce". Is this rule supported by science?
In this episode, Food Science Babe explains why a black-and white view of processed foods as "bad" or "toxic" is not only scientifically unfounded but potentially harmful. She highlights some benefits of food processing, debunks common misconceptions around additives, and shares core concepts to help you shift from fear-based to fact-based choices.
Food Science Babe has worked as a food scientist and engineer in the food industry for over 10 years in both the conventional and organic sectors.
She created a social media platform to spare others from falling prey to misinformation about food and the food industry. You can find her on Instagram and Facebook at @foodsciencebabe and on Twitter at @foodscibabe.

It’s much easier to just pass off every food as good food than to take accountability for what you’re putting in your body.

No, it's much easier to make generalized assumptions (processed = bad), rather than doing actual research and not just blindly trust uncle joe the farmer and inflencers who sell you THEIR healthy option while telling you that completely safe food is dangerous

Our country was stolen so having a hard time giving a crap about processed foods. We'll be eating bugs before it's all over.

That's what they want you to be doing anytime soon. Did I miss the part in this talk where they acknowledge that the impossible burger meat is highly carcinogenic?

It's not a question of whole natural food being always best, but it is true that it is usually best. The truth is that there are no essential carbs, sugars or starches and you can be more healthy limiting without these ingredients. These are the predominant additives in processed foods. Saturated fats are far, far better and nutritious for you than polyunsaturated fats. Cholesterol is not the problem. Inflammation is. Seed oils are not generally healthy and should only be consumed in strict moderation. If you review the biochemistry of inflammation in the body, you'll see why this is so.
There is nothing wrong with preservatives, but "highly" processed foods need to be approached with caution. Toxicity can be no danger at micro doses, but some have cumulative effects, if habitually consumed. The laboratory is seldom better than "nature's kitchen". The more natural you can keep your diet, the better.

She was very quick to denounce coconut oil in this talk as being high in fat. She should know that it is unlike other fats and does not have the same effect. I wonder - if either of these women had a choice whereby they have to live the rest of their lives either eating only processed food or only natural whole stuff, which would they choose?

If you didn't have inflammation at all. You'd be dead on the spot, infact you wouldn't even have a immune system

Can you cite your evidence for these claims? I can pin at least 3 human randomized studies that show that carbs are essential, saturated fats are not as healthy as polyunsaturated fats and inflammation is not what you think it is.
