Take a big parchment sheet, put the dough in the middle, cover with another. Fold the 4 sides, flip over and roll the dough. There, perfect sharp straight edges.

These look amazing! As always, your tips are super helpful -- I'd never thought about kneading fat head dough after mixing it. (Incidentally, white baking chips -- so far I've only been able to get Lily's brand, but they're pretty good so I don't feel at all deprived -- are now easily available in Canada, which makes me very happy. I made your macadamia nut cookies with them, and they were DELISH!)

Hi Carolyn-have you tried other sweeteners asides Swerve? It has natural flavors in it and I try to avoid that. I have a brand called Besti and it is just allulose and monk fruit. I also do not understand the baking differences with all the sweeteners.
Carolyn, what do you think of fathead dough recipes that use the food processor? I use one for rolls that is really easy. I wondered if you have any basis for comparing that process to the one where you do it by hand (which I have done too).
Anxious to try these. Question. Because these are made with cheese do you have to keep them refrigerated? What is the best way to reheat them, great videos, I get hungry watching these.

It doesn't keep well since it loses elasticity as it cools.

They are fine on the counter for several days. Just re-heat gently for a few seconds in a microwave.
