- Greetings! I want to share with you my family's special recipe for oatmeal cake with a broiled coconut topping. I affectionately call it "Funeral Cake" because my mom only ever made it when she needed to take something to a funeral. I had to laugh because I took it to her house for Thanksgiving dinner and she said that she had just made one to send to a funeral! How funny!
This cake is super moist and delicious. It is made with simple ingredients that you will have on hand and even in your food storage. Oatmeal, eggs, butter, flour, sugar, brown sugar, nuts, coconut and evaporated milk. It is simply delicious.
I make mine with double the topping. Mom says it's too much. I disagree! This is wonderful the day you make it or the next, but in my house this disappears fast so you better get you some or it will be gone!
This cake would be great for any occasion. Potlucks, office parties, get together's and of course funerals! You could make this and cut it into bars and divide it up on pretty plates, wrapped with cellophane and have a couple really nice neighbor gifts for Christmas!

I was making this cake in the early 1960's, and lost the recipe during a move we made. I got the recipe from a friend who was Finish. Her mother carried the recipe all the way from Finland in the early teens. Only God knows how old this wonderful cake actually is. I have never seen the the recipe until this very day...26 April, 2019. It is as good as any cake could possibly be, but much better. A thousand thanks for bringing back something treasured.
My grandmother in MS made this when I was a little girl (late 40's-early 50's). I loved it. Haven't had it in many years. Must make this for the holidays! Thanks for the memories :)
I'm pretty sure my great aunt use to make this frosting when "I was knee high to a grasshopper"! She had pecan trees on her property. She's no longer here for me to ask but all of these years I remember the great taste and just thought it was german chocolate frosting but after watching your recipe I'm sure it was more like yours. So yummy, you just brought back very fond memories for me.

My Grandpa used to tell my Grandma not to worry about how that pan looks, those ladies at church with the nice pretty pans don't really cook or their pans wouldn't look like that. Hahahaha
I made this cake today and oh wow, it's delicious. I baked it in a 9" square cake pan so probably could have made less of the topping. My jaw is tired from chewing all the nuts and coconut in the topping but it was worth it!
Oh! Oatmeal Cake! I made this for a restaurant I worked for years ago. It is in the Lion House Dessert cook book (so are a lot of other really good recipes). I also doubled the topping but used slivered almonds. It was a best seller. Thanks so much for sharing! ( btw Lion House is a restaurant in Salt Lake City.)
I'm thinking you probably don't read these comments in these old old RUclipss but in case you do, I have several of those treasured recipe cards also. I put them individually in a ziplock bag and then they at least don't fall apart and don't get any worse while keeping their sentimental beauty.

also, I am allergic to walnuts and pecans so I substituted hazel nuts and almonds chopped for the topping, it was great

I was a new nurse in 1971. I had a patient's wife who wrote down this recipe for me at Christmas. She brought this cake in for our staff as a Christmas treat. Believe it or not, I still have this recipe which is taped together and folded in my old Betty Crocker cookbook. I never threw it away. It is a DELICIOUS cake. Yummy.

I have not done that yet. I do make my own vanilla extract, but I got such a good deal on the paste at TJ Maxx that I probably won't run out of it anytime soon. It probably would not be hard to make though. I also make my own vanilla powder.
Hi! What memories this recipe stirred. I stirred up this cake many times when growing up. There were 9 children in our family and It was always a challenge to pack school lunches. I used to stir up this cake at night so we could.have something to take in our lunch box with our sandwich. We didn't usually have the extra money to top it. It was a very moist cake we called snacken cake. So delish and gonna make this for my honey. 😃
I have this recipe. a coworker gave it to me.honestly its so easy you can't mess it up. She never even used to cook the oatmeal just used hotwater oatmeal stirred it set it to the side for half an hour then came back to it and. Proceeded with the cake. It was awesome!--

I made this cake and used Debs take on this because I didn't know that it was this cake and boy did I do this different than you but it still turned out really good. So this will be my go to cake when I don't feel like making it with the mixer and all the bowls. It sure is good thanks for making it for us
Noreen I just recently found your channel and I just love it. Most of the recipes remind me of my grandmother's recipes. I am just wondering if you thought about putting together a cookbook. This was my fav cake as a kid.My Mom who didn't really like to cook would make 3 layers from scratch and the icing too as her Dad had a farm with many pecan trees.Ours never had oatmeal in the cake either.I still have the old wrapping w/ the recipe from the choc bar for the cake.Hope you had a wonderful Thanksgiving Noreen.

Ms. Noreen, this recipe is almost exactly like a cake made by my Mommy's school district when she was growing up... The only difference is the addition of about 1/4 tsp of salt and 1 tsp of cinnamon in the cake batter! The cake was SO memorable that many students are still talking about it, even 50 years later! (If you don't believe me, Google "Neshaminy Cake" and you'll see what I mean!). :-)

We make porridge almost every day. Could we just use the left over porridge and add the remaining ingredients to that? If so how much oatmeal mix is there?

We Southerners commemorate every joy or tragedy in life with food. When I hear someone has died I think I better get in there and make some baked beans. Now I have an alternate fueneral recipe. I won't reserve it just for funerals though. And by the way I need more vodka, too, LOL.

+tani mani No. Using anything else will compromise the recipe. I always recommend that you make a recipe as written the first time then you can go back and make changes. If you are considering using whole wheat flour that is not a good idea. I will make the cake tough and dense and it may effect the way the liquid is absorbed, rendering your cake dry and disappointing. If you are attempting to make this cake gluten free, then I suggest you find a recipe that is developed for gluten free baking for a cake similar to this one. Using a gluten free flour will not work either and the cake will most likely turn out flat and greasy.

Noreen would you or maybe your Mom have a recipe for chocolate spiced cake? My Grandma used to make it when Iwas a kid. She frosted it with chocolate frosting. I never got the recipe. I do remember the Hersey Cocoa can on the counter when she made it. It was baked in a 9x13 pan. Haven't been able to find anything close.Thanks in advance whatever the answer. God Bless You and Yours

There is a particular recipe I came across not too long ago which calls for vanilla powder. I searched online and oh my they are expensive. a small packet is i believe $10 to $12! so please let me know.

You need to use sweetened flake coconut. Not fresh.

Laminate that valuable recipe card your kids will be grateful you did, I have a very valuable Million dollar fudge recipe in my Grandma's handwriting and its the only thing I have from her.
This is the reason for making too much oatmeal for breakfast and what to do with leftovers. This recipe has been in our family since the "30;s" and many generations.
