I made the chicken and rice dish a few days ago. We really liked it. I put chicken breast in the crock pot for 3 hours with some thyme, basil, oregano and chicken stock to cook then shredded it for the dish. making enchilada skillet tonight. I have 4 kids so these recipes are perfect for weekday meals.
Would LOVE a kids snack recipe video one day. Anything thats homemade to avoid packaged snacks :)

I made the enchilada bake today. I added some diced red peppers, and I just simmered on the stove covered for 15 minutes instead of putting in the oven. It was very good and easy!

Hi Elizabeth! Thank you for your videos! I’m learning so much & am starting to cook with healthier ingredients & found a farm in Vermont near us that sells raw milk! Wondering how do you keep your veggies fresh in the fridge? Could you have a video about this? Thank you!
The main thing is eatng them as soon as possible- keeping them on a paper towel after drying them helps us. But we use them up quickly. We buy a ton of veggies and within a week they are all eaten😉

I think so! Maybe just wait to melt the cheeses for when you’re ready to eat.
What are the advantages of using your Breville toaster oven over your regular oven?
Doesn’t warm up the kitchen as much? Just more convenient?
Toaster ovens require less electricity and don’t heat the kitchen as much. If you have a gas oven, you may find it doesn’t cook consistently.
What brand are your tortillas? Looking for good ones.
Mine were just the organic ones from Costco but Sprouts (and places similar) carries one called Rise and Puff that are made with only flour, avocado oil, water, and sea salt 👌🏼
What can I use if I don’t have a cast iron enamel skillet? I have a regular cast iron skillet!

At 74 I don't drive so in order to get to the place where they do sell healthier would cost a small fortune, which Unfortunately in the long run wouldn't be worth.😔 💛 from 🇨🇦
