🥣 ingredients:
4 medium-sized potatoes (2lb | 1kg)
1/2 cup lentils (3oz | 100g)
1/3 cup vegan feta (1.4oz | 40g)
1/3 cup sun-dried tomatoes (2oz | 60g)
1 chopped onion
1tsp smoked garlic
1tsp ground cumin
chopped parsley

ℹ️ Feel free to add your favourite dried herbs and spices to get the flavour you enjoy the most.
ℹ️ You can substitute sun-dried tomatoes for roasted bell peppers or chopped fresh tomatoes.

Hi lovely Julia and gorgeous Lancy. Lancy if you only knew how much I adore you. If I lived near you I'd be begging to babysit you. Even tho I'm terribly allergic to cats I'd dope myself up just to visit you for a bit lol. Darling Julia I haven't tried the Grandpa's Lentil Pizza. It's ready but I have to wait till it's time for my one meal so in about 2 hrs I'll get to enjoy it. I know I'm gonna love it because it has all the ingredients I like. I thought I bought naan, but as it turned out it was actually flatbread so I got to make it exactly your way. This new recipe is right down my alley. As you know I LOVE white potatoes so this will be my next meal for tomorrow. YUMMY! More like OMGOLLY YUMMY lol. Sending love and hugs and thankfulness to you dear Julia. Why use two panes for boiling the potatoes and lentils? They could go into the same pan to save on washing up and energy use. Just add the quicker cooking one later.
