Just want to add: adding salt while the onions are in the oil accelerates their cooking since salt helps pull out the water from onions. Also, people usually add turmeric to the potatoes for a little bit of color.

This is great! I am going to try with the kids. I have made samosa from scratch (once). Never again, lol. It was such a long and tedious process. I love samosa and usually end up buying frozen or fresh from the Indian store. But this works perfect. Thanks :)
+K Kaur Yes, you most definitely can do it that way! It may be easier for those who have a difficult time peeling raw potatoes due to physical limitations.

So I've started water sautéing my onions, garlic and spices. No difference in taste and no unwanted fat calories! Win win.
Nice idea. Samosa filling also works really well in spring roll wrapper (nit egg roll). Great in.a spring rolls shape of samosa baked.
