    I have a tip for you Jessica! I was out of tomato paste too. So, I filled my 4 freeze dryer trays with my homemade canned sauce, to rehydrate- just add back a smaller amount of water after powdering your tomatoes! Works like a charm. Now I can make paste, sauce, juice, etc. most of my harvest will be freeze dried and powdered. It saves on jars and space. 🍅

    Good morning Jessica. Last Sunday, my sons decided that we needed to inventory the freezer for meal planning. Today we are making pad Thai in the crockpot. I'll cook a pot of rice (in the oven, because it doesn't burn to the pan if you forget to stir it), cherry cobbler (last summer's harvest) and green beans to make a meal. I'm heading out to harvest fresh mint to make iced tea for the kids for lunch. I grew up on sweet tea, but when my sons were younger, I tried to reduce their sugar intake. I discovered that adding fresh mint to the tea made it more palatable without adding any sugar. If I get it steeping now, it will be cool enough to refrigerate when I return from church, and I'll make a second batch for the remainder of the afternoon. I've started to harvest and dry my herbs as they are growing like weeds at the moment. I haven't yet planted a garden (school ended on Friday, and this teaching mama has been out of steam for months!) but that is on the agenda this week. I discovered a huge stockpile of ground beef in the freezers, so I want to cook some of that and get it pressure canned this week. I know that if it is precooked, I will make crust and cook a pizza for myself after work, but remembering to thaw meat before I leave for work is problematic. It also is of benefit when I've made mashed potatoes, and have extras, because I can throw together a shepherd's pie very quickly, and have a meal that doesn't taste the same as yesterday's meal. I'm grateful you reminded me of making zucchini bread, as I discovered three gallon bags of shredded zucchini in the freezer. I think Joe would really like it if I used his favorite veggie to make him something sweet! Thanks for the inspiration to clear away things that need to be used!

    You keep amazing me with your organizational skills, keeping track of everything, I guess I'm on the opposite side of the spectrum:(( I bake chicken legs and potatoes together in the oven, potatoes on the bottom, legs over it, potatoes release steam and legs fat, so they combine perfectly. And all it take is time to season and put in the oven:))

    I'm slowly going through and catching up on videos, and ketchup on eggs! Growing up, my dad would make scrambled eggs so dry that they were terrible unless you put ketchup on them. He passed in 1999 when I was 14, and I still make scrambled eggs (not dry, though!) and top them with ketchup when I want "Dad eggs."

    I don’t have a lot left to do a pantry challenge but I’ll definitely join you 🤗 I did a lot of freezing last fall. I lost everything in a house fire - just got the canner replaced though so I’m pleased about that. I’m already able to grab my lettuce 👍 Waiting impatiently for my collards 😋.     I very much enjoy your videos. After watching last week’s video (preparing for preservation-various methods), I determined that my enjoyment stems from your passion in what you do. Using pickled items on pizza is my favorite, most especially pickled asparagus and Kalamata olives. I whole heartedly agree that smoothies are a satisfying meal as they were my meals 3x/day during some medical procedures on my jaw. I had been concerned about not being satisfied but if you pack nutrient rich ingredients, your stomach will be happy. My favorite combination is beets, avocado, pineapple and dark cherries.

    Starting off with a bang! I have tiny potatoes left from my garden and will now roast them with my onion tops, dill, and parsley. I was going to make some biscuits for supper with fried fat back and plum jelly and can use the fat for the potatoes. YUM!

    I love that you track the cost that you save by comparing the cost of what you would spend had you had to purchase what you’re growing. Quick question: do you also track what it costs to grow your gardens? I’m tracking that as well and so far, since the beginning of preparation for my this year’s garden, I have spent what it would cost for a week’s groceries. I’m loving that. Plus, I don’t have pay a gym membership because my “workout” is in the garden, where I prefer to be if I’m not in the kitchen. So there’s that.

      I agree! We lived in a very small town in Missouri ( our son’s HS is South Carolina had more students than our little town had population!), and a lot of the unusual ingredients couldn’t even be found at the local grocery stores!

    Have you thought about doing cashew mozzarella cheese for pizza night? It doesn’t taste like chicken is a good recipe and it’s likely stuff you have on hand (from what I’ve seen on your videos)

    Have you tried the dairy free cheeses? You use almond and cashew milk, couldn't you use those to make cheese?

    You're eating well! I also use a few pea leaves in salads & dandelion leaves (just a few). Pea leaves, carrot tops, dandelion leaves can all be added to a homemade greens powder as well.

    Those Bosch mixers are so sturdy and great quality! I never grew up with one but my family friend who I consider as a grandmother uses one to churn out huge batches of cookies and other recipes. She's had it for years!

    Jessica have you considered the Bosch dishwasher with the built in water softener? You add the softening salt right to it. It might work for you guys and really help cutting down a bit of the work load.

    I got a ton of sweet corn from a local farm. I cut it all off the cob and froze it, I was told you couldn’t freeze it on the cob, even if you blanched it. Thanks for sharing now I can try that this year.

    Still working on my pantry challenge only (who am I kidding, mostly) for this whole year so far. Ran out of pork so added a small amt, and last week had so much food leftover from the generous plate my new neighbors brought to me on Memorial Day even after I froze some. Otherwise so far so good. Tiny garden this year transitioning into hot weather things I don't grow so much. Will be making jam and canning up other things out of the freezer, steadily converting frozen to canned due to our all too frequent public saftey power shutoffs. So far so good there too.

    I agree! Smoothies fill my son up. Hes in a few sports and you can add so many nutrients in a smoothie. It seems like people must say something about how much food you give your kids. I hope you know there isn't anything wrong with how y'all do your meals.

    I have been looking forward to your pantry challenge ever since you announced it! Thank you for the great ideas! I believe I heard on some videos that you can some of your fruit without sugar or sweetener. Is the fruit still sweet once it goes through the canning process? Is there anything special that you do to can it? I love the way you use the leftover juice in place of milk and for many other things. I love watching the videos of you and your family. They provide comfort and joy to older people like me whose children are grown and very busy.

    Have you tried the Montreal Chicken Seasoning? It’s amazing! My husband compares it to the flavor of the chicken restaurants put on their Cesar Salads. Everything looked delicious! I really love the outdoor griddle. Such a great way to keep the heat out of the house in the summer.

    One thing our kids have in common is ketchup on eggs 😂. I wish I could get my 5 to eat as well as yours do. If I tried to put sardines on anything they’d starve themselves lol!!     Since you like to do some prepping of food the night before and have your menu for the week done, what about grinding all the flour for the week at one time? You already know how much you will need and it seems like it would save time.
    Also I love the idea of using zucchini powder for the bread. I preserved my zucchini in my dehydrator last fall. This year I have more plants and that would save lots of room in my pantry.

    Grilled is my favorite way to eat salmon. Your recipes all look fantastic and I am going to try several of them. I don’t have chickens so I will have to shop for eggs, but I am trying my hardest not to go the store all month! This is very enjoyable and a great way to see what I need to add to my garden, pantry and freezer to go longer without the grocery store. Thanks so much for doing this!

    Once again, this made my Sunday! We are getting lots of kale and lettuce from our garden so last night we had a kale and lettuce salad and we put some of our canned pork on top!
    Today, i am canning up some chicken, hopefully making some zucchini bread from the garden, my fermenting sauerkraut is probably done and we are starting to waterglass eggs. Takes me alot longer then most folks as I have to sit down quite often.

    I let my corn cool just a bit and cut the tops off and put in freezer bags of you can put it in a pillow case put in the freezer

    Last year, I managed to keep my basil going all summer by keeping it in the shade. Our temps were in the 90's from May 1st. Would it be possible to rig a small shade over your lettuce?

    Jessica. I would like to find a program for a senior citizen by herself.. Is there anyone out there. . This past month has been difficult for me. I buried my daughter.     I make an Italian dish with sardines. Use onion, garlic, dill, pine nuts, (can sub. walnuts),raisins, sardines, tomato paste, (or sauce) to make a sauce. Then add to pasta. Sprinkle the cooked pasta with bread crumbs toasted with butter. Suprisingly delicious.😮
