I am a HuGE fan of middle estern cusine. I grew up eating some of these food when I was a child. But i struggled to find the exact recipe because most of the food shows were broadcasted in Arabic. Now I can make them. Wow ! Brings back so many memories. Keep going !

Wonderful! I will make a version of this for New Year, adjusted to what is available here in rural Croatia. I grew up with the flavours and smells of Middle Eastern food ... in Sweden ... and I miss it so. There are no pine nuts where I live (strange, I know) and no pitta. I know how to make my own, but I don't have time or strength for it now, so forgive me for the wheat tortillas I will use. The pine nuts ... hm ... almonds? No. Toasted sunflower seeds. I'm kind of broke, but sunflower seeds are cheap and toasted they add a really nice flavour. Thank you!
I'm quite lucky to have a Middle Eastern grocer nearby, but your substitutions makes sense! Pine nuts are relatively unheard of here, so I would definitely use sunflower seeds or peanuts to replace them. Bread is bread and stale ones are best consumed as croutons or bread pudding regardless.

Vegans out there: If you are from Europe, try the Oatley creme fraiche if you can get it or the Dr Oetker creme vega. Officially both are labelled as creme fraiche alternatives but they work lovely for any of your Joghurt needs like Tzatziki and the like. Also, @obi thx for the tip about cooking the chickpeas once out of the can. My hummus never got as smooth as the one from my Syrian Falafel Dealer so maybe this will help getting a bit closer to their standard :D
Good suggestion there. In terms of hummus there are a few of things that could be effecting the texture. First yes canned chickpeas aren't cooked to the point of softness, rather just to be edible. Cooking them longer will make the chickpeas softer. Another thing is the chickpea skin, removing each of the skins manually will make a much smoother hummus, but it's time consuming. A third thing is your food processor/blender. To get the ultra creamy kind, you need something like a Vitamix which is super powerful.
It helps to add a tsp of baking soda to the chickpeas. The alkalinity helps break down the skins of the chickpea, and it's balanced out again later with the lemon juice.
Just made it, showed a picture of it to a Syrian friend of mine. He thought I ordered it at a restaurant, so seems like your recipe is on point!! 😂 It tasted amazing, thanks for this awesome dish Obi!!!

What an unusual recipe. I love hummus as a dip. The idea that it can be a meal sounds filling and delicious. And I love it’s simplicity. I’ll be making this for breakfast soon. 😊
In India, we usually pressure cook the chickpeas with water and salt the morning after the chickpeas are soaked overnight. Usually 6-7 whistles softens it enough to make hummus with it. It saves hours in the cooking process
As a syrian who loves this dish, I suggest adding pomegranate seeds on top of the fatteh or using pomegranate molases, and serve it with a side of cucumber pickles, spicy pepper pickles, or any type of pickles that you prefer. And most importantly a cup of sweet black tea!

The skins come off super easy while the chickpeas are all submerged in water. Picking them off that way goes pretty quickly. :)
