hi syed, just some food for thought ive been trying all sorts of curries now for ages on foody sites but never quite hits the mark for me until came to yours, great bty, have noticed you using chopped garlic mostly as apposed to garlic/ginger paste like all others ive tried, any thoughts ? keep up the good work their working for me

Ok garlic-ginger when we make a BIR curry we use gravy, pre cook chicken or lamb we already added garlic-ginger paste. Garlic-ginger paste is very strong. For single portion or 2 BIR curry we don't need strong flavored garlic ginger paste. It will ruin the flavor of the curry. If you make curry and you gonna use fresh non pre chicken or lamb then you use garlic ginger paste. Otherwise just use freshly chopped garlic.
can for the spinach be from the tin or fresh or frozens
you can, but the spice level will increase a bit.
