If I remember right, the Pisces can go on land, but it's not anywhere near as mobile there, and is designed to be functional for amphibious assault and landing actions. In one of the magazines, there was also the mention that the design originated as an environmental pack for the Leo (Similar to the Flight and Space packs) that didn't work out as planned, and shifted to an integrated suit of its own. A lot of that technology for the Pisces integrated suit was also applied in the design phase for the Taurus. There was artwork of them rising out for a shore assault situation. It also meant that they didn't require a harbor or specialized facilities for launching them. It could also swap out the torpedoes for rocket or missile pods, possibly also mortars
it's a shame we'll probably never get an official model kit for this suite, then again if we did it's highly likely it'll be P-Bandai and most of will never be able to make one for our very own! Sad times we live in, I'll never thought we'll see an actual gunpla shortage , a very strange world we live in indeed.
A fun video and definitely when it comes to many of the early mobile suits we get in Gundam Wing I have love for the Pisces. I think the reason the Pisces and Cancer seem limited when compared to the Zeon amphibian units is they were built to compete against the Gundams of that time like the RX 78, but the Oz units were built to compete against Leos Aires, and other normal units. We actually see how well they do against each other when Sally and Noin use them to great effect when retrieving the Wing Gundam but also when Romafeler attacks the Sank Kingdom that are using Oz units to defend themselves and those units on shore are whipped out by just a squad of those units.
Funny enough, I think the Pisces was the first amphibious MS that I liked when I started in Gundam. I just find it over all much more versatile than the Cancer. As for its legs though, I think I remember a scene when on Pisces was in the shallows right by shore and fired missiles at something. So, I do think it can walk, but still best to keep it in water as much as possible.

I think most OZ MS really shine when against their intended targets, as in non-MS enemies, which is a theme they share with the Zaku from UC. I do think some Zeon MS are better suited for underwater combat than others that as you well pointed out, mainly use cruising mode for transportation to the target location. The Z’gok variants equipped with torpedoes on its head launchers are a prime example of a MS that can excel at both roles. The often forgotten phonon masers of the Gogg (one on each side od the head) should in theory also make it rather effective in cruising mode against targets in front of it. Same goes with the Zock and likely the Jurick, which has some similar openings on both sides of its head. Ironically, the Acguy with its many weapons is one of the MS not designed to deal with threats in cruising mode. But I digress, let’s go back to the Pisces. Regarding ideas for variants, my suggestion would be borrowing the hover unit of the often forgotten OZ-07MS Tragos (since it’s named after a Zodiac sign). Funnily enough, the Tragos do has a bipedal version whose legs are similarly bulky as the ones of the Pisces, so the sharing of the hover unit might actually be more doable than expected. The torpedo launchers could simply be switched to regular missile launchers, while the arms are changed into either multi cannons (mini gun/gatling guns) or large enemy weapons to avoid recoil issues. With the above being said, I do think the Pisces could be used on land, since even the bulkier & less practical Goohn from Seed has occasionally been seen to join the Zno for ground assaults (though in the one particular case I remember, it quickly got shot down). Lastly, I suggest doing Gundam X’s DTM-7000 Daughseat and/or the DTM-7200 Daughseat III: It’s no secret that the MS from Gundam X are heavily based on OYW U.C. units, but with the twist that the United Nations (the EF equivalent) is the one that came up with lots of variants for their mass production MS, the Daughtress. In other words, the Daughtseat would essentially be Gundam X’s take on what an amphibious RGM-79 GM should have been like.
If anyone wants to know my sign, I'm a Capricorn! And the one suit that is in the AC universe is a Mobile Doll! And a little fun fact about it is that it has a heat rod for a ponytail if I remember correctly.
I honestly really like the design of this aquatic Gundam, usually they look so bulky and looks like they have hard time turning while this (while still looking bulky) looks like it would be able to move around much easier, quick question is their a Gemini Gundam or something like that?
