    Mediterranean Prawn Pasta
    Serves 2 people
    Ingredients
    3 garlic cloves, minced
    ½ cup of fregola
    3-4 unpeeled king prawns
    2 cups of fish stock
    1 Tbsp (30ml) of lemon juice
    ½ cup sun dried tomatoes
    110ml (4 fl oz) virgin olive oil
    2 Tbsp (60ml) of Gremolata
    To garnish:
    Red chili
    Salt
    Pepper
    Sumac
    Thyme
    Cook the fregola in hot water following the time indicated on the package.
    In a pan, add the prawns with the olive oil, the red chili, and sumac to taste. Leave to marinate 3
    minutes on each side. Add the fregola. Lightly stir for 2 minutes and add the fish stock. Continue to stir for 5 minutes. Then add the salt, pepper and thyme to taste.
    Serve and add the lemon juice, the gremolata, and the sun-dried tomatoes.
