    Intro:
    Idli Podi is also known as idli chilli powder and is a substitute for chutney. Idli Podi is used while travelling or for lunch boxes. Mixing Idli podi with sesame oil or ghee, can be served with Idli or Dosa or Uttapam. Idli Podi is popular in Andhra & Tamilnadu. In this recipe we will see how to make both Idli Podi and Podi Idli.
    Ingredients:
    1 cup chana dhal/kadalai paruppu
    1 cup urad dhal
    1/4 cup coriander seeds
    5 dry red chillies
    1/4 cup white sesame seeds
    9 kashmiri chillies
    1 handful dry curry leaves
    1/4 tsp hing/ asafoetida
    10 small garlic cloves
    and salt to taste
    Method:
    Idli Podi:
    1. In a heavy bottomed pan add chana dhal and dry roast till they turn golden brown. Transfer to a plate and keep aside. For uniform cooking, keep on stirring while dry roasting.
    2. In the same pan add the urad dhal and dry roast until they turn golden brown. Transfer this to the same plate and keep aside. Then dry roast the sesame seeds until golden. Transfer to the same plate.
    3. Now in the same pan, add coriander seeds and roast a bit. Then add dry red chillies, kashmiri chillies and dry roast them & take care not to burn the chillies. Then add curry leaves and fry until the curry leaves become crisp.
    5. Switch off flame, quickly transfer this to the plate with other dry roasted ingredients and add asafoetida/hing over the hot ingredients which is in the plate. Keep aside.
    6. In a small pan, heat a spoon of oil and fry garlic cloves until golden, then drain the oil and add the garlic cloves also to the plate.
    7. Allow the plate of ingredients to cool down then In a mixie jar, add the entire roasted spice mixture. Grind it into a lightly coarse powder. Then store Idli Podi in an air tight container.
    Podi idli:
    1. In a wide plate take 5 tbsp of freshly ground Idli Podi, in a seperate plate pour 30 ml of sesame oil.
    2. Now take your hot idli, around 6-7 and one at time dip & roll the idli in the plate of oil then roll over the Idli Podi. Repeat for all Idlis. Make sure that the idlis are hot while making podi idli. Podi Idli is ready to serve.
    Travel parcel:
    1. In a news paper, place banana leaf then the Podi Idli ontop. Fold into a parcel and tie with a cotton thread.
    Now you have a travel ready delicious meal.
