  • Vadacurry Recipe || An incomparable Combo For Set Dosa & Roast Dosa
    Prep: 4 hours | Cooking: 40 mins | Serves: 3
    Intro:
    Vadacurry is often served in restaurants with poori, idli and dosai. This curry is very unique as it uses a vadai base to give a flavourful texture, it's taste is also incomparable to anything else. It’s a must try recipe!
    Ingredients for Vadai:
    1 cup chana dhal
    1 handful urad dhal
    1 small piece ginger
    1 garlic clove
    1 green chilli
    salt to taste
    Ingredients for Curry:
    1/2 tsp fennel seeds
    2 cinnamon
    2 cloves
    2 med onions (finely chopped)
    3 green chillies (finely chopped)
    1 big tomato (grinded)
    1 sprig of curry leaves
    1/4 tsp turmeric powder
    salt to taste
    coriander leaves to garnish
    Method to make Vadai:
    1. In a bowl, add the chana dhal and urad dhal together, wash it and soak for 4 hours.
    2. In a mixie jar, add the green chilli, ginger, garlic and salt to taste. Then drain the water from the soaked dhal and add to the mixie jar.
    3. Grind into a coarse paste. Transfer this to a bowl.
    4. In a kadai, heat oil to deep fry. Once the oil is hot enough take the grinded vadai paste, make small balls, flatten and then deep fry. Allow it to cook for a while. Turn occasionally, and fry until both sides are golden.
    5. Once done, drain excess oil and collect into a plate.
    6. In preparation, once the vadai has cooled down, break it into smaller pieces. Keep aside.
    Method for Curry:
    1. In a pan, heat 20 ml of oil then add the cinnamon, cloves, fennel seeds and fry a bit.
    2. Now add onions, curry leaves, green chillies and saute until the onions soften.
    3. Add the grinded tomato paste, turmeric powder, salt to taste and saute until oil oozes out.
    4. Now add 2 cups of water, cover and cook for 10 minutes to bring it to a boil.
    5. Now add the vadai pieces, cover and cook in low flame for 10 - 12 minutes.
    6. Open & mash the vadai very well, bring it to your desired consistency, this is personal preference.
    7. Finally garnish with chopped coriander leaves and turn off the flame.
    Delicious Vadacurry is ready to serve with roast dosa or set dosa.
