    You've seen us process a lot of bison, but you've never seen us remove the hide. Today, The Bearded Butchers are going to show you exactly how we skin the bison that we raise right here on our own farm in Creston, Ohio.
    The bison we skin in this video is a 24 month old bison bull. Seth uses a variety of 6 inch Victorinox knives. He is most comfortable with a Victorinox 6 inch, semi-stiff curved blade knives. The hide is thicker, the hair is thicker, overall, a bison is difficult to skin. Compared to a beef hide, a bison hide is extremely dry. The hide on a bison can be close to a half inch thick in some places! Dealing with the hair is usually the biggest issue but it has to be managed. Keeping the carcass clean is the most important part of skinning an animal.
    3:40 If you have longer and shorter blades, use the shortest one on the legs. As you skin, use your thumb to keep pulling the hair back away from the exposed carcass.

    As a leather worker including tanning, I'm impressed with how clean and tidy even a difficult hide is. The cattle I've worked with from local butchers are full of holes they use to pull the hide with. I would absolutely love to work with some of these.

      Hey man, does it get tough in the business with all the regulations against sourcing the hides? At least that's the impression I get when I see a lot of leather workers working from another country outside of the US.

      I love this channel. Guys like you literally do this are tanning. My kid does what he hunts. Eating beaver. Deer in the pressure cooker with a squirrel on top for flavor.

      Even doing a hairy hog is hard work-- that hair gets everywhere. Of course, they're using all the right equipment (cradle, hydraulic hoist, etc.) so it becomes far more efficient. Your best move is to have a few *very* sharp knives available and that makes it a lot easier.

    I had the opportunity to harvest a Bison in Alaska this past Thanksgiving. A lot of 1sts for me! The size of the animal, the amount of hair and the thickness of the hide! We put in 9hrs from 1st hide cut to last pack out bag filled. The hide is currently getting tanned.

    Love your content! You guys are awesome. Remember growing up in Russia, it was the way of life for us. I used to come from school and see a life goat or a sheep tight up to the pole and half an hour later there was heart and kidney and liver of the animal searing in the pan.
    I took my children to a livestock in New York to get a chickens a lamb. And after that my child became vegetarian….. 🤷🏻‍♀️

    Very clean job of skinning! I learned some from obsidian and flint tools to skin and scrape(Archaeology studies as a kid then at university). Makes one appreciate how the First Nations people procrssed bison. Also, how they hunted them on horseback or over a buffalo jump. I do some leatherwork with tanned deer and moose hides from a 1st Nations company in the Laurentians in Quebec. Can also get bear grease and some other products but only in Canada.
    Really enjoy your videos. Have learned a lot.

    Nice video. Never thought to use a boning knife for skinning. For the past several years I've used the smallest Bucklite Max II. I love the control and closeness I have with that little 3" blade. I also take a small steel into the field and touch it up often. But then, I've never skinned a bison, so I'm no authority there! Great work and thanks for the video!

    It's very satisfying watching any animal being skinned where the hide is still whole and without holes. It's also a good thing non of these animals are wasted.

      Yeah the whole time I kept thinking I want the hide. Of course the biggest hide I’ve ever worked with was a rabbit so this would be a little out of my knowledge zone. Lol.

    Excellent video BB Team!
    Very educational and informative. What I like most about these behind the scenes looks is it always gives me a better understanding for where my money goes every time I purchase quality meat from a butcher. There is a lot of time, effort, and skill involved in getting those cuts of meat to consumers.
    Not to mention that there's just something satisfying about watching skillful hands at work.
    One question though, do you repurpose the hide (or any other parts of the animal) or is it all just thrown away? I'm not sure I've ever heard you guys discuss that end of things.

    My dad was raised on a small farm not far from where I currently live. They raised their own meat. My dad was very pragmatic about the process of taking an animal and turning it into food. As a little kid, I "helped" him part out the whole fryers that we would buy. We didn't hunt, so I wasn't exposed to that side of things. I took animal science in high school and raised a lamb and then a steer for my class projects ending in a local youth livestock show and auction. I didn't do very good with my lamb, but the following year I got a reserve champion for his weight class for my steer. He was a Angus-Limousine cross and the biggest steer there.
