    maybe this is your version or the American version ... in Italy we do not use bacon or garlic ... the real carbonara is made with the guanciale eggs and pecorino romano ... salt to put in water for the cooking pasta ....

      Brandon u don’t have to hear it... you have to taste it! Guanciale and pecorino are very salty, parmigiano and pancetta are more sweet, so if you season carbonara with more salt it gets way tooooooo salty... black pepper is in the original recipe... so the flavors are all there... garlic has a very strong taste, it destroy the recipe! Garlic is a nono in carbonara! You can like it... but it’s another recipe

    You Americans think you know Italian cuisine !!! Garlic doesn’t exist in a Carbonara !!! Ingredients are
    Pasta - flour and water
    Meat - guancale or pancetta
    Sauce - eggs , pecorino and Parmesan
    Carbonara is roman and roman cuisine is a poor persons cuisine . As little ingredients as possible !!!!

    Good, but not very good, you made 2 big mistakes: 1. Gralic. Carbonara don't need gralic, only pancetta/guanciale, eggs, pecorino romano/parmesan, pepper, and stop.
    2. The salt not at the end, it goes in the water where you Cook the pasta.
    And one little mistake: don't put the olive oil when you saute pancetta/guanciale, because the pancetta/guanciale grease it's enough. But at the end it' quite good
    Excuse me, for some eventually grammar error, i'm italian and i'm not good in written English, but I hope you'll understand

Carbonara is a very easy dish, but you must know some cooking technique for to have it, and choice the perfect type of pasta. 3 words: pasta trafilata al bronzo, risottatura, mantecatura fuori dalla fiamma. And you have a really dish, if you use the specifico ingredients: for carbonara guanciale, pecorino romano, pepe. You must look 1 time to Cook and eat original italian carbonara, and then you can understand! Cheers, 😂😁😎

    That is not the way the carbonara is done in Italy, body. By the way, is carbonaNARA and not carboNATA. No need to use all that sort. The water must not taste of ocean... In fact if you use pecorino romano cheese, indeed even less salt than usual is required in the water, being it already very salty. No way garlic, no need of oil, generally guanciale is used and not pancetta. Guancial releases its own oil for the taste. There is a specific reason for the guanciale, due to the type of fat involved in it different in taste and consistency, and finally tell your wife that the egg is not cooked but pasteurized only, which is different. Using hot boiling water is enough to pasteurize it, before adding to the pasta. The fire is turned off (and left that way), BEFORE you add the egg. By all means change th carbonara if you like, use ketchup or even dish-soap if you prefer, but do not call it carbonara anymore, and above all, do say it's Italian.

      Eggs are not always safe to eat raw, I use to eat eggs sunnyside up, then over easy, now boiled, fried, or scrambled.
      I love the taste of garlic in most of my savory foods.

    :) I don't care about an authentic dish, I care about food that tastes amazing. Understand that recipes are templates and don't have to be followed exactly. Some of us are blessed with creativity that we pour into our food. More than likely the carbonara recipe was born from another recipe that those people didn't follow exactly either.       @@meri5173 Where did you pull the idea that I would call what I make carbonara? I never made any type of inkling that I would. There are many variations of carbonara not just this one. But in the event that I want to call it carbonara I will do as I see fit. Take a walk and get your priorities together. This is most definitely not a top notch priority with all the more serious things that are going on in the world.

    Ragazzi, fermi tutti...non c’è bisogno di arrabbiarsi (non mi arrabbio io che sono romano), basta dire in italiano, in inglese, in francese, in tedesco, in spagnolo e in arabo, che questo video non rappresenta totalmente la pasta alla carbonara... e che se si vuole documentare (specialmente per gli americani), ci sono tanti canali italiani di RUclips dove fanno vedere il vero procedimento.     I am from Rome where the recipe originated. The ingredients of carbonara (that means coal miners style) are simply three : eggs, guanciale bacon (pork cheek), pecorino cheese. Parmigiano (what's pamijeeaaaan?) is not from Rome. Guanciale is fryed in a pan in its own fat. This is the original recipe. And please, nooooo cream!

    1. Use Guanciale. 2. Use Pecorino Romano. 3. Don't use garlic. 4. Don't salt the water (guanciale and Pecorine are salty). 5. Don't use olive oil, use the pork fat. 6. Don't cook the eggs on the end. Use au bain marie if you want. 7. Use more black pepper. 8. Use only egg yolk.

    “The problem” here on RUclips is that everyone, who presents a Carbonara (or another Italian dish), writes in the title ...“ *the real* ”..... or “ *the best* ”..….
    PS: By the way, he here can't even pronounce the name right. He says…. Spaghetti “Carbonata”. (0:17) And this guy would also be an Italian !

    Well, I love Buddy and I love it when he's baking cakes. But I'm not even Italian and this still is the wrongest Carbonara I have ever seen. He didn't even pronounce it correctly.

Personally I think the strict formalism is a little weird, but at the same time it is fun to try and stick to the accepted traditional process.

      @@BuddyValastroandFamily no because you call it authentic ! come here and learn how to make the real thing! You are an American Italian not an Italian American. Don't call fake things authentic. We don't even know what parmesan is in Italy because we eat parmigiano which is the real thing, and to make a carbonara we use pecorino we don't use garlick and you have to use guanciale not pancetta, so this is not a carbonara but a simple pasta with eggs garlick and fake Italian Cheese

      @@mattiagiordano758 Guanciale is very hard to find so pancetta is just as good. And he should've also used authentic ingredients as Pecorino Romano (DOP), and skip the garlic and olive oil.

    Almost perfect! So only a few little and big mistakes which we're :
    -Garlic - You don't need to add garlic since the flavor of it it's already in the Guanciale/Pancetta, but if you want more a intense flavor of garlic you can add more. You can also add garlic if you use smoked bacon, but if you want garlic flavor buy the cured one ;
    -Olive Oil at the end - Already had olive oil in the beggining which wasn't needed cause' the Pancetta already has alot of fat. The amount of fat from the Pancetta is good, adding the olive oil is too much and adding again olive oil at the end is exagerated ;
    -Parmesan cheese - Pecorino Romano is the original way even tho people and lots of chefs mix it with Parmigiano, it's still not traditional, but this isn't really to say a big mistake. You can add a mix of both if you like, you can add only Pecorino if you like or Parmigiano ;
    -The spelling of Pasta Alla Carbonara in the video.

    Hi guys,I'm italian and we don't use pancetta,we use guanciale!And,we never,NEVER,use garlic in Carbonara.Last thing:we don't put parmesan,we use pecorino cheese!!!!!!
