can confirm that the knorr tamarind soup base is pretty much a household staple and even restaurants use it. even in the philippines, it's rare for people to make their own sampalok base since it's cheaper to just use the powder. if you want a thicker broth, you can also add taro root (locally called gabi)
You should try vietnamese sweet and sour soup. They balance the sweet, sour, and salty in a different way but very similar to the Philippine soup. I love both
