    Bialetti - Italy’s finest Mokapot has been an icon of style & refinement since the 1950’s. The Bialetti Company is the legacy of one Alfonso Bialetti, the engineer behind arguably one of the world’s favourite stove-top coffeemakers. The Bialetti range is extremely easy to use & to clean. Simply fill the bottom compartment with water and place it on the stove! The original Bialetti Mokapots came in an aluminium finish which is still available today, although the range has expanded to accommodate to the different stove tops found in homes today. Thanks to Bialetti Australia, everyone can experience delicious stove-top coffee at home!

    Have been using the classic Moka Express, but the lid doesn't stay opened and hard to tell when the coffee is finished if I'm not paying attention. I have left it on the stove longer than I should several times. Otherwise, a terrific vessel, affordable "espresso machine" and will be of great use for year and years.
    My grandmother used the same Moka classic for decades and that was how she drank her coffee 50+ years ago!
    I have also brewed coffee for friends using this and have gotten others to join the Bailetti gang. Also, great video content. Love the accent and greetings from SoCal.

I have several methods of making coffee, AeroPress, Pour Over, French Press, Cold Brew, Turkish, and of course the Brikka; and of all those the new Brikka gives me the same sort of flavor of espresso I have had at Italian restaurants, or at coffee bars; also, the Brikka is much more fool proof than the old Moka pot I had where I struggled to get a perfect cup, with the Brikka I succeeded on the very first attempt, I have yet to have a bad cup with it. • @Rekmeyata
      @Rekmeyata Год назад +3

      @@merveceren7068 No, the grind is too fine, Turkish grind is ground as fine as powdered sugar is, thus the grinds would simply pass right through the mesh screen and into your coffee, and it would be nasty. Moka grind is about the same as espresso grind, though some people say it should be a bit coarser, I use an espresso grind and I'm happy with the results.
      If you haven't tried Turkish coffee, try it, it's easy to do, what's difficult is finding the coffee for it. I happen to have an international market where I live and they carry Bosnian coffee, which is the same, and its pre-ground to a powder. Turkish coffee has a unique taste to it, I like it.

    Great videos man. I enjoy the content quite a lot. May I ask, for a Hario Mini Slim Pro how many clicks for a nice moka pot grind? I'm doing 3 clicks from fine to coarse and it seems a bit over extracted. If I go 1 click coarser then it seems to be under extracted...
    Appreciate your reply.
    Cheers

    • @AlternativeBrewing
      @AlternativeBrewing  4 года назад +4

      thanks so much! So you can manage the extraction by the grind / dose / time / temperature and agitation - being a Moka Pot though you don't really have control over agitation & I always prefer to slightly under extract the coffee then have it end up bitter so ...
      Try grinding on 4 clicks - and to even up the extraction to be more extracted - you can either lower the dose slightly (so the same amount of water contacts less coffee thus increasing the contact time and extraction there) or brew the moka pot on a lower heat that increases the time of brewing - although I find having to wait longer for my morning coffee difficult 😂 / or the opposite - turn up the heat to high and brew it fast and hot - I don't recommend this method though.
      Another way you can navigate Over-extraction is by diluting down the final brew - it won't remove the bad flavours but make them a little less intense. 👍

      HI Kev, - thanks so much!
      I recommend perhaps putting just hot water through it once or twice without coffee to help clean out the pressure valve. pressing it down nice and firmly and rotating it around in order for it to be seated properly over the spout is important too. Check to see if the seals are all still nice and rubberry and are not cracked, dried out or broken. I've heard some customers use heated up milk in the microwave first to help the milk reach a good temperature or otherwise, yes milk straight from the fridge will only be warm once it has mixed with the hot coffee.

    A really well informative guide to the full range of pots available, I went for the induction model after seeing this, question though is most demos say simply fill the basket with fresh coffee, does there need to be some room left for the water to pass through easily, also would it be ok to tamp it lightly?

    • @AlternativeBrewing
      @AlternativeBrewing  3 года назад +4

      No need to leave room - so long as you have a grind not too fine... but if you prefer to grind very fine - than leaving room can help give space for the grinds to swell and allow water to pass through easier - but otherwise a 'moka pot' grind will offer this percolation during brewing. - I've always tamped lightly - and it's never made me consider I'm doing it wrong. If it works and tastes good - don't change a thing 👌

      @@anderspedersen7488 You can beg all you want but that does not make you correct. Millions of people with Moka pots use pre-ground coffee sold in vacuum packed bricks. The coffee can not oxidize if there is no air present. If you keep the coffee in a sealed container and use it up within two weeks there will be no noticeable oxidation. This is exactly what millions of people do. Blind taste tests show that people can not tell the difference between pre-ground and fresh ground coffee. The reason coffee shops use whole bean and gind it as needed is because they buy whole bean at a fraction of the price of pre-gound and they have very good grinders that grind quickly. Yes, the best way to get crema is have fine coffee and a very hot stove - boil the water and essentially let it steam out - it's the opposite of what I recommend, but it's a failry consistent way to get some form of crema on top - but know that the crema you get with these Moka Pot is not the same crema as what you get in an espresso machine , it'll dissipate quicker and won';t be as strong

    I loved using the original aluminium moka pot on a gas stove, as is common in many kitchens around continental Europe. I then decided to buy a stainless steel version to use on an induction stove back home, which has always been very disappointing. I'm not sure if it's due to the larger size of the pot, inferior build quality (it's not Bialetti) or the induction itself, but the coffee is never as good :( Maybe if you want to mimick the rich flavour of espresso, the smaller the moka the better? I'm not sure.

      The "off" brands often use an upper perforated filter with holes that are not quite the right size and they don't build up enough pressure for a proper extraction. If a replacement Bialetti upper filter fits in your pot, try that.

      It has to do with the seal on the inside. Head to alternativebrewing.com.au/products/bialetti-replacement-seal-filter and at the bottom of the screen there are measurements for each individual size moka pot and it's seal. Give this table a go and see if there's one that is accurate to your model. Let me know how you go!

  • @darknessblades

    If one would have a Super-automatic espresso/coffee maker, what Ratios would be good to get a similar taste to Mokka Coffee.
    Not forgetting the settings needed?
    Since i don't really understand the difference between Mokka and regular coffee

    • @AlternativeBrewing
      @AlternativeBrewing  3 года назад

      Moka coffee use a ratio of about a 1g of coffee to 5g of water (1:5)- is the concentration. Espresso coffee uses a concentration double or more than this, so 1g coffee to 2g water. Therefor is stronger in strength and flavour.
      To make a similar strength coffee as a Moka from an Espresso Machine you'd want to dilute the espresso by twice as much - let's say you're using 20g coffee, and getting 40g out. Try getting 80g out and than diluting this down further with another 80mls of hot water after extraction... (I haven't tired this method - and I wouldn't want to run the shot for too long as over-extraction is a real thing and tastes bad (althought!) you can dilute over extraction down with water which helps it appear less bitter, but more than not, no less tasty.

      it all depends on the amount of coffee to milk you use and the strength of coffee you've brewed. Too much milk or not enough coffee will end up that way yes... but using a good espresso roasted coffee and 1st heating some milk up in the microwave than adding to the pot during brewing - it's sensational 👌

    I've got the Ikea-mokapot, curious to know how this one is in comparison to the Bilettis.
    Sometimes I ask myself if the Ikea one is just trash or my coffee making skills is bad. My observations with it is that it never really gives proper crema, tends to be very acidic and bitter despite how fast i brew the coffee.

    • @Daniel-dj7fh
      @Daniel-dj7fh Год назад +1

      My observations:
      - Cold water not good at all, hot water in the base.
      - low and medium brew also not good, faster brew at stove setting ~7 makes the coffee less bitter and/or acidic depending on the roast.
      - i use aerppressfilters to filter the grit, which leads to a better drinking experience. And I also try to avoid the pot from hissing to prevent the burnt water taste in the coffee.

    This was a great video but the question I was hoping for wasn't covered; what's the major differences between the stainless steel pots. The Venus, Musa, and Kitty?

    • @AlternativeBrewing
      @AlternativeBrewing  2 года назад +7

      The looks mainly. They sizes differ by a fraction between them. The lids - the Venus and the Kitty- you can flip the lid whilst holding on to the handle but the Musa has a shorter lid flip. The Kitty, you can pour out from any angle - other than backwards - whilst the Musa and Venus - you want to be pouring straight out the front. The handles on the Venus and Musa are bakelite, where as the Kitty has a stainless steel handle and silicone cover.

    Great video! I believe I have an induction stove as it only works with certain pots and not others. Do you feel the thermal conductivity of the moka induction (half aluminum half stainless steel) is more similar to the full stainless steel models or the full aluminum models? Also, my element heats up super fast, even at low settings - will this affect the flavour/quality of the coffee produced?

    • @AlternativeBrewing
      @AlternativeBrewing  2 года назад +1

      Great question - I would say it is 50/50. A touch more like an aluminium pot on flavour - but heats up and brews quick like a Stainless Steel pot. FWIW (I prefer aluminium),
      It's tricky - as there is pulses on most Induction stovetops - and yes the heat is transferred very quickly. You want to make sure you water is already hot - and you have a reasonable fine grind. Than let it do it's thing on a low and slow... I would look to removing it off the stove - or turning the stove off once it is about 3/4 way through the brew
