    I would use fresh Cilantro instead of fresh parsley. Parsley isn't a Hispanic herb. Do you agree?

      Hola Diane, Both Parsley and Cilantro are native to the Mediterranean region (Greece, Morocco, etc.) but in our culture, we favor the cilantro so we use it more. However, the culantro (recao), which is the cousin of cilantro, is native to Mexico, South America and the Caribbean. The Taino Indians cultivated the culantro (recao) in Puerto Rico. Today even in our culture, we are using more parsley in our foods as a garnish or as a food ingredient. The cilantro has a stronger taste compared to the curly parsley. You can definitely use the cilantro instead of parsley if that is your preference. When I prepare this dish, many times I will use parsley or cilantro. Enjoy your Sunday.
