I see that you fold it in half but I’m wondering about the smaller outer folds. Are these measured or it it simply random where it bent and that will be the point
That's not constant. that's different whenever I work. It's up to material sizes, cutters and structure. The angle is the same too. But I usually use 14 degrees.
This is great, but you really could speed things up with sleds so that you can get close cuts with faster confidence. A 90deg sled with a 14deg wall and 14deg sled with a 90deg wall. You'd be 2x-3x faster over time.

Surprisingly effective but probably actually faster to do by hand with a decent dovetail saw, coping or fret saw and chisel.

They are measured. Before I make final folding l try to fold a couple of times.
