3 oz enoki mushroom, cut root ends off
2 cups napa cabbage leaves, cut into bite pieces
8 oz soft or medium firm tofu, cut into cubs
2 green onions, chopped thinly
4 cups water or vegetable stock
1 tablespoon canola oil

I thought this recipe would be very bland and without much flavor but it was actually quite tasty! My husband and myself just turned the big 5.0. (Yikes!) and decided it was time for a lifestyle change. We also read a doctors study on true/authentic Chinese cooking which has been deemed to be extremely healthy. I've never eaten tofu (that I can recall) before and I wasn't sure if I would like it but it was quite tasty as well. Seems to me that tofu is one of those food items that tends to soak up the flavors of anything you add it to? Thanks so much for posting/sharing this surprisingly filling/delicious soup recipe! Here's to our health :-)

if you like a bit of spice in your cuisine search chiu chow chili oil.. very simple yet adds huge amounts of flavor (not so much heat) to a vegetarian dish. And don't be afraid of the oil content.. as long as it doesn't "fry" and keep the oil stable it's still a very healthy food staple. (kind of how they eat in the middle eastern/mediterranean cuisines.. they just add raw oil to everything without heating it up)
Well it also seems to me that this recipe would be tasteless, how comes you found it to be tasty ? Maybe it's the type of mushroom, all these ingredient beside the greens are meant to absorb taste but the only punch I see there is the salt and the oil, it seems to me that that would taste just like fatty salty water.......

be careful before adding water into oil. make sure you are at safe distance and oil is not very hot. it can be very dangerous. Happy cooking:)

They are Enoki mushrooms, also known as Enokitaki. You may use button or Bella mushrooms. Enjoy 😊

Can you store a big pot of this soup in the fridge for at least a week? or will it go bad? Just looking for something easy I can premake and grab from the fridge.
T J Vegetable soup should eat fresh, although it can last for next day in the fridge. You may try to freeze it, not recommended though. Thank you! -Ling

How do you make tofu like that? I tried it in restaurants only but at home the texture is so different! The tofu that comes in the miso soup for example is delicious and has a texture almost like gelatin, it's so good but I can't recreate it at home!

You can add radish and ears of corn to the soup to make it sweeter. Boil like 20 mins.

Some soup are meant to be light. You can always throw in meat.
