If you boil potatoes with skins on then peel put whole potatoes when still warm through potato ricer you'll have fluffiest potatoes ever!!!

Ahhhh! I'm Irish American and I have to advise not to cut the potatoes so small. it makes the mash watery. Sour cream will fix it, though.
