Recipe: Chicken Stuffed w/Cheese Bacon Wrapped and Tomato sauce. Ingredients: - Chicken Breast - Bacon - Cheese (shredded mozzarella) - Onion - Garlic - Parsley - Flour - Smoked Paprika - Ground Tumeric - Eggs (egg wash) - Bread Crumbs - Tomato Sauce (canned) Cooking Instructions: (Bacon/Ckn Chz wrap) Start by forking your chicken generously with holes to help the seasons penetrate. Butterfly your chicken (slice in half and separate it) and pound with a mallet to thin it (helps to cook it faster). Spread your cheese and parsley in the middle. Lay your bacon strips and interlace together. Set the chicken in the middle of the bacon blanket and wrap it closed. Now, let's make the batter. In seperate pans, make your breading (chop up bread crumbs), egg wash, and flour whisked/seasoned with smoked paprika and ground turmeric. Grab your bacon wrapped chicken and coat the flour/seasoning, egg wash, and breading. Heat oil on medium high to high till hot (if you splash a drop of water and it sizzles it's hot enough). Heat both sides for about 8 -12 minutes till crispy and brown. If using a deep fry method, make sure to flip it even though it is submerged about halfway through the cooking. This cooks the batter but not the chicken. Set the chicken, add cheese on top, and set on a baking pan on a wired grill and preheat oven at 375 - 450 degrees Fahrenheit (about 10 min to pre-heat so cook the sauce while waiting as chicken rests). Add the sauce on top of the bacon/chicken (check below for sauce instructions) and cheese. Bake for 15-20 minutes. Use a thermometer to check it so it's not pink. If you account carry over cooking, it should be ok at 158 degrees Fahrenheit as it should reach 160-165 degrees Fahrenheit to be done. Remember, if it's still pink, it stinks and cook it longer. Add garnish and enjoy! Tomato Sauce Instructions: You will need to dice an onion and about two cloves of garlic (use as much as you like). In a saucepan, add a couple tablespoons of oil and mix in onion/garlic. Add your tomato sauce (canned tomatoes of your choice) and cook on medium high heat to high and let it cook for 10 minutes (till it slightly bubbles). Example being onion/garlic powder and paprika because of the color and it adds spice/seasoning from the actual herbs or spices. Certain ones like turmeric, I can tell based on how it looks when seasoned on the dish(the label on the bottle will sometimes say it), but I still research as well to see if there are other alternatives since some are ambiguous. I don't know if he has a recipe book of these.

You can eat a wild chicken raw. Chicken can also hit 165* F and still be a bit pink. You can undercook chicken and be fine, I wouldn't go below 150* but I'm not an expert. Also depends on cooking method, but a product like Tyson or Perdue should definitely be cooked to 165* F. I'd be more hesitant to eat "undercooked" pork because of trigognosis (sp?) and general factory farming conditions.

Yeah, the first thing I noticed when he cut into it was that the cheese wasn't even melted. No way in hell that the inside of that chicken came even close to temperature.
Regardless to the other points, wrapping meat in meat is very common practice? I cant tell you how many times ive seen bacon wrapped hot dogs in my lifetime. Im not sure why this is a point against the video
Thats proper food safety practice. Regardless of what you are currently using the suface for, if it touched raw meat last then it needs to be sanitized before being used again. Raw meats can spread their own bacteria onto other raw meats very easily. I guess in this case it seems pointless considering the bacon was being used to wrap the raw chicken anyways, but yknow, better safe than sorry
The chicken isn't actually raw. The juices coming from it are clear, which indicates that the chicken is fully cooked. Cooked chicken can be pink, white, or both. It depends on what part of the chicken the meat comes from.
And to add, while this isn't on the bone, chicken cooked with bones in is frequently pink/red near the bone from the marrow leaking out. Particularly with friend chicken this is common.
Y’all do realize you put it in the oven to cook after deep frying the crust right?! If it was raw it would be shinier and juicy not matte and juicy. Plus the pink would be darker. You don’t have to cook a chicken to hell to eat it. You just have to cook it to temperature and it’s usually right where he had it visually.

The fact that the cheese in the center wasn’t melted means you hadn’t cooked the meat long enough. My suggestion would be to do everything except fry the chicken. Bake it in the oven until the crust is golden brown, then throw the sauce and cheese on top and then broil for a couple minutes.
This recipe looks amazing. Personally I would give it a little more time in the oven before applying the topping and then finish in the oven. Also, I am not a fan of limp bacon myself.
