- Today I am gonna make the best chicken salad of my childhood. This Mexican-style chicken salad is great on crackers or tostadas. Once the ingredients are mixed and seasoned to taste, be sure to refrigerate until you are ready to serve.

INGREDIENTS
1 1/2 lbs cooked shredded chicken
15 oz can mixed veggies with potato
3/4 cup mayo ( to start)
1/3 cup Mexican cream
3 Tbsp pickled jalapeno liquid
1 tsp Maggi sauce
2 scallions
salt & pepper to taste

I haven't seen chicken salad made like this, definitely going to have to try. I've been looking at purchasing one of the indoor tabletop garden things... Does is work well in the winter? Thank you!
Hi dilly...I've been debating the same thing as well, & I keep going back to Amazon & random online greenhouses comparing prices...('Temu' has very reasonable prices & free shipping...) These tabletop gardens are supposed to do fine during winter, & if you don't have enough daily warm sun, then plant lights & plant lightbulbs (which are usable in regular everyday lamps) work well...😊🌱
If the indoors are climate-controlled (i.e., heated for people to live comfortably in the winter), then the plants won't know that it's winter outside.
I have never tried growing vegetables indoors, but I do have an indoor nursery for cactus and succulents. I also use it to start vegetable and flower seeds indoors a couple months before the last frost of winter, and then later when weather is warmer I transplant them outside. I know that some vegetables like lettuce, cabbage and other cole crop leafy greens, including spinach and some mustards actually like colder temperatures and hate too much heat. I will say that "nothing beats actual sunlight" (read that again), but plant lights that are sufficiently bright or close to the leaves or multiple plant lights used together will allow the plants to survive and do okay. I have mine set on a timer to turn off automatically during the night and come back on in the morning. Indoors, many plants may not "thrive" but they will survive. Also keep in mind that constant air flow is better (like the air outside) to reduce unwanted growth of fungus and mold from damp soil that can't dry out quickly.

OOO! I used to make this when I worked in a grocery store deli.. but I don't recall using Jugo. I'd always buy a small container with every new batch so I could have it for lunch on my shift. SO good!

Yes as you said, the addition of the mixed vegetables is something new to me. But when you said it was how you enjoyed it growing up, it made me want to try it. I too love to remember and share the special memories from my earlier years.

I really enjoyed this recipe. Thanks for sharing! Personally, I wasn't a huge fan of the Maggi sauce flavor, but maybe I just went overboard with it. It still turned out great after I made a few adjustments.
What type of Mayo is that and what’s the brand name of it ? Thank you it’s appreciated.
In past videos she used a similarly-shaped squeeze bottle of Kewpie brand mayonnaise. It looks like the label of such a bottle was removed in this particular video.

Sounds good but you lost me at the veg-all. I am not crazy about the idea and all the salt it brings to the dish. I would definetly make it without that.

Girl, I grew up adding the mixed veggies to chicken or tuna salads too! Still do. Hubs can just take his own scoops before I add the veggies lol

💛...slightly thawed frozen veggies would make a more vibrant colored salad...i've found that most canned veggies are too soft and tend to taste the same...

Made this for dinner yesterday… it was perfection. Super simple and delicious! Made for a great lunch today as well.
We had a family friend that made this for us about 30 years ago and yes we used tostada shells. It was so good, my sister and I still talk about but we never make it because none of our kids will eat it 😢. This brought back so many memories of our beloved friend ❤️

Like this idea. My version will have vegan mayo, Turkish garlic sauce (by Heinz in the UK), maybe a curry seasoning,
and vinegar for the sharp taste where you have table cream, but you gave me the idea, and thank you for that.
Most like the idea of growing simple salad and herbs in a hydroponic system and will be looking up "Treecaan" that is new to me.
Salad tomatoes are growing from saved seed in my garden already!

@@danielkaiser8971 it has a hint of lime. Yes, I suppose you could add lime juice to regular mayo, but what I’m really talking about is a particular brand. It has a very distinct flavor that I would normally associate with a Mexican style chicken salad. IYKYK
