Interesting! Lasa expedition. I agree, there are plenty of indigenous recipes that are unknown in the bigger population.

The food habbit of people of Kalinga province in Philippines is quite similar to the people of ancient Odisha ie Kalinga of India . So I think , ancient Odisha people migrated to Philippines via navigation route . Odisha people are brave, courageous and strong . Philippines Kalinga people have similar physical appearance with the physical appearance of South Western Odisha people . Same name Kalinga in two countries arose because they are the original ancient Indian Kalinga people ie Odisha people .

THE REAL FOODS ON EARTH... no additives, no etc, its always one of my dreams to have a food tour in the North of Luzon because that's one region of the Philippines who eats more of vegies and less frying!!! I think!

Maybe the reason why their pork is so good is because it's fresh and newly butchered.

The technique of singeing...you burn the superficial skin and hairs of the animal before cooking. Mongolians do this also. This is so common in Cordilleran tribes. It makes the meat savory.

Dog meat is very traditional here in the Cordillera but very controversial to Non-dog meat eaters because other neighboring regions also eat dog meat like the Ilocanos, Pangasinense, Ilongot and etc. The main reason for consuming such animal is very similar to the boa or nganga that the minute it enters the body, heat rushes to the entire body and blood pressure shots up. It is not recommended with anyone who have heart problems, high blood pressure and the similar disease and illness.
