So I'm glad to know across the world in Kenya you eat some of the same dishes...I loved this but I'm now a vegan so I use besan flour instead of eggs..thank you so much I do cook your dishes just without meats and my new hubby is a island boy from St. Lucia who only eats seafood and poultry... keep it going much love to you and yours from East Texas.💖💖💖💕

It starts out as regular chipsi mayai but once you add mishkaki (skewer grilled marinated meat) it becomes zege.

I honestly have no idea. All I know is that most African foods were not fried, originally. They used to be steamed or boiled but were still very tasteful and wholesome. Frying is one of the adaptations that have been taken up into our cuisine with continued interaction with different cultures.
