He increased the flame rate....its like he pre-meditated everything.. NOW THATS WHAT I CALL AS A TRUE INDIAN WAY COOKING.. SLOW COOKING.. AND SOOTHING TASTE TO THE BUDS

Loved few things about this---- the calmness and accepting attitude of the cameraman. The very sincere way of saying thank you for the food offered. Calm and extremely sincere cook. All these elevate the eating experience.
But for the disposable gloves. He could have used them !! Otherwise it looked so professional. I wouldn't think the guy understood the names of the ingredients the chef was rolling out!! (though the gentleman nodded gracefully)

I've worked as a oven fan cleaner I haved cleaned over 150 restaurant here in Chicago land area. For this reason I don't eat out if you seen what behind those door you wouldn't either. This restaurant is incredibly clean. I would eat here.

My mom used to cook the best dosa in the entire world, dosa very soft inside slight crispy outside perfectly cooked in iron tava without any oil not before, while and after cooking, just wipes the tava with a oil applied cotton cloth . Hotel dosa is this and house dosa is different. My mom's dosa just melts in the mouth with coconut, tomato or eggplant chutney
In India there is no rules and regulations and no body cares and you could bribe the food inspectors . Outside India Indians are scared there restaurant might close down and have big fines so they follow the rules , so they keep it clean. The restaurant could be on local news channel also.
