    Do you want to try Japanese ramen? :P
    As a Muslim, it's not easy to eat ramen because most of Japanese ramen contains pork and alcohol.
    But, I love ramen soooo much!!
    So that I cooked halal ramen called Tori Paitan ramen.
    "Tori" stands for chicken and "Paitan" refers to a white and creamy soup!
    Thick white broth prepared by boiling chicken bone until melted.
    All certified halal ingredients are bought in Malaysian grocery store.
    Enjoy Halal ramen!!!!

    ★Ingredients
    [Chicken bone broth soup]
    ・Chicken carcass...1kg (1~2 whole chicken)
    ・Onion...half
    ・Carrot...5cm
    ・Ginger...5cm
    ・Garlic...3 cloves (Peeled)
    ・Green parts of leeks
    [Kaeshi] (Sauce used before mixing with soup)
    ・Halal soy sauce...5 table spoon
    ・Halal mirin...3 table spoon
    [Ajitama] (Soft-boiled egg with a taste)
    ・Sugar...1 table spoon
    ・Halal soy sauce...2 table spoon
    ・Halal mirin...1 table spoon
    ・Water...2 table spoon
    [Chicken chashu]
    ・Chicken chop...2
    ・Ginger...3cm
    ・Green parts of leeks
    ・Halal soy sauce...2 table spoon
    ・Halal mirin...2 table spoon
    ・Sugar...2 table spoon
    ・Water...500cc
    [Noodles]
    Bread flour...250g
    Soft flour...250g
    Salt...5g
    Baking soda...5g
    1 Egg + water... total 220cc
    Potato starch (for dusting)

    As an Indonesian moslem
    I can't eat Japanese culinary it because they are using Pork and any alcoholic liquid like Mirin, Shoyu or Sake in their Cuisine
    But you are making japanese dish in the Halal version

      @@nurmakiskitchen5012 ​ @Nur Maki's Kitchen nice to know that, btw i want to ask something, in many japanese recipes, sake, mirin, shoyu and miso are being used for that, we can find halal kikkoman mirin and shoyu in indonesia, but how do i substitute sake for authentic taste of japan ?

      @@nurmakiskitchen5012 second, ​ if i find a recipe with koikuchi shoyu and usukuchi shoyu in it, can i substitute them with only halal kikkoman shoyu ? thank you so much
      i went to japan for honeymoon in 2017, and after that i really crazy about japanese food, hahah, specifically abour ramen

      @@2006mumu Sake is usually used for marinating meats and fish to tenderize or remove their smell.
      Actually, the alcohol evaporates during the cooking process and has no taste of its own after evaporates.
      So, when the recipe says "add a little amount of sake to marinate chicken or fish", I simply skip that process.
      When the recipe says "pour a large amount of sake (like 1 cup) to boil or stew", I replace water with sake :)

      safuraa sali You can use regular pan but make sure to boil until chicken bones are soft :) You can add water while boiling if the broth is reduced. You Should try!

    Hi,can marinade sauce used for mirin sauce?

      I haven't ever tried marinated sauce. Mirin is basically sweet. Honey can be substitute for mirin but it's sweeter than mirin, so use half amount of mirin. For example, 1 tablespoon of mirin can be replaced by 1/2 tablespoon of honey😉

      sarah mango Sorry for the late reply. It takes around 30 minutes on low heat :) Once water reduced half, it's time to stop fire.

      Sorry for the late reply.... I'm using Hamadaya or Kikkoman. Hamadaya is certified Halal.

    Assalamualaikum hi have questions huhuhu. What is the taste of sake actually and what is the best substitute for it? & Is it kombu is halal?

      Waaiaikumsalam:) I don't remember the taste of sake... All I can remember, before I revert to Islam, cooked sake is tasteless because the alcohol evaporate.
      Konbu is just seaweed so it's considered halal:)

      If you like thick flavor you can blend all bones but it might be too gamey.

      @@nurmakiskitchen5012 is it necessary to boil for more hours after using high pressure cooker if i want to make for many people? lets say i want to make for 10-15 people. i will have family gathering soon so i want to make this for them. btw yes i love thick flavor. thanks

      @@faber7298 If the bones crumble easily into pieces after cooking in the pressure cooker, I don't think additional cooking is necessary. But if the bones are still hard, you should cook them additionally.
      If you use all the bones, it will be gamey, so you can dilute it to the thickness you want. Use a strainer with a fine-mesh filter. Otherwise, the soup will be less palatable.
      Wash the chicken bones well and remove all organs😉

    What ? halal mirin ? Didyou talkabout a sauce which the taste is similar to mirin ? I mean, alcool without alcohol (like beer without alcohol) isn't halal in islam... What is halal mirin ? Did want to say vinegar ?

      I used below product, this is not real mirin but Japanese sweet sauce.
      Mirin taste sweet. When cooked, the alcohol evaporates and the sweet flavor remains.
      Hinode's Halal Mirin taste the same like mirin but without alcohol.
