Looks yummy! Although you mentioned it tastes something like pumpkin pie, or better, which I can believe. That is not what butterscotch pudding tastes like at all. 🤷🏻♀️ But it does look good; sweet potatoes are delicious.

thank you! Why didn't we think of making desserts this way already? we have become so reliant on dairy and sugar today... How would you substitute yogurt? Do you eat just plant based yogurts with added probiotics? Also why do you not bake the pie in the oven, I thought that would make the oat base more crunch?
Personally I make my own oatmilk yogurt in an instant pot without any added anything. Just blended up oats with water and strained. Cooked until thickened to a heavy cream consistency. Pour in to instant pot and I break open a probiotic capsule and mix in when the cooked milk gets between 110F - 115F temperature. Then i let it ferment for 15 hours. Works like a charm and doesn't have nearly the calories of any vegan yogurt out there. Very very plain tasting but it's an excellent base.

I wish all of you, who r vegan and plant -based, would come up with recipes like your pudding, but substitute the bananas for something else. Plant based eaters use a lot of banana , and it makes it really hard for those of us who r, supposedly thru an Ige test, sensitive to bananas. I love bananas but I guess I shouldn't eat them. It makes it really to make desserts. Please come up with substitutions for bananas . ThNks
