    Great video, straight to the point no nonsense. I have seen a lot of videos that took 20 minutes or more and you finished in under 4 minutes. Thanks a lot for the recipe yours is the one I'll use.

    very similar how we do it but also add margarine and celery, and we let all the veggies go for a while before the crawfish to develop all the flavors in our stock. thank you for not making a 20 minute video, loved it =)

    Great stuff as always. I have a thought on how you can tell if the crawfish is undercooked or overcooked and wanted your feedback.
    Undercooked would have a very stiff shell where it would be difficult to get the meat out and overcooked would be where the shell is very soft and meat comes out too easily. Is this a fair assessment of these two scenarios?

    So you start the 5 minute time immediately as soon as you pour in the crawfish? Or once its back up to a boil? Ive seen both but Im not sure. Also, depending on which of those method you do is it still beneficial to cool the pot off?

    If you don’t ice them down at the end do they over cook while they soak for a half hour? And is that half hour with the burner off long enough to cook the shrimp and crab through?

    question? If I have more than 1 batch of crawfish can I reuse the same water or should I restart the whole process?

      you can throw in more crawfish right after the first batch no problem

    I always purge mine first in salt water, but not for 3 days like Larry did. But they look finger lick'in good.

      The guys at Texas A&M have proven that you just need to wash & rinse them several times and that's all. They say that purging them with salt water just kills them and isn't needed.

      There is no evidence from this study that suggests the use of salt in cleansing crawfish was beneficial. this statement is taken directly from the article you posted.

I used to purge them with salt water but I just now clean with with regular tap water. Alot of ppl here in Louisiana still do it but alot of us quit too when we found out that salt literally did nothing.

    wow, this video has me wanting to head back to Louisiana as soon as possible -- one question though -- some of these videos have you add ice to cool things down while the crawfish soak -- you guys didnt do that -- does it make a big difference? Is there a reason why you don't? Just curious, great video!

      Chris Capano It’s the shell of the crawfish that makes the difference. I don’t like to slow the cook down to fast on my crawfish. Down here everyone boils their crawfish different...

      most overall accepted way seems to be 20 minutes in clean water. most agree salt just kills them

      Crawfish aren't scavengers like crabs so you don't "purge" them like you do crabs. Basically, what you do with crawfish is bathe them in water to wash the mud/dirt/debris off of their bodies. You can put them in a large ice chest and fill it water while having the drain plug open. The ice chest will fill and you gently stir them around while the water slowly drains. Do this 2-3 times until your water isn't dirty anymore. DO NOT use salt. Salt will kill them and they don't need to throw up whatever they have eaten (probably rice). A crawfish will also drown if left in water too long. I've grown up around the industry since it took off in the 70's (I'm 54) and I've never put anything in my purge water. "Al Scrimuza would slap ya for doing anything other than bathing them babies" . That's an old New Orleans saying BTW.

      yes 1 sack or 30-35 lbs, the Corn was frozen, but it looked like the shrimp was not frozen (or cooked)

    is it long enough to cook the potatoes? i guess it's like 10 mins to boil the whole pot of water, 5 mins boiling with the crawfish, and 30 mins later in soaking? wait, i forget it's small potatoes, then it should be fine.

    From New Orleans and wanted to try something a little different the other day so i tried pineapple in th boil! Big mistake!!!!!! I. My opinion it was soooo nasty! Some people talk about how good it is but it was very nasty
