I haven't tried bouncing light off of a wall or ceiling yet to light a subject... It's soo crazy that I haven't thought about that. It really puts into perspective all the little things that go together and must be in your mind when shooting/preparing the shot. Soo grateful for youtube vids like yours and others. It drastically helps.
Bouncing light has saved me so many times - I actually initially set up the "RUclips Studio" with a much more complicated setup, but then I tried the bounce and liked the look so much more! It's simple, but gives the exact feeling I was going for. Glad it's helpful - that's the goal!
