can you override the initial setting? if I decide that I need to adjust the seat settings previously saved can I do that? this video seems to have provided only some of the needed info and there's no mention of this feature in the owner's manual for 2023 vehicles

Yes, just reset it. Adjust seat how you want it, press SET, then number 1 or 2 (your fob number).
