- In this video, I will tell the story of how a former gang member became a 3-Michelin-star chef. His name is Eric Vildgaard. Today, Chef Eric and his wife are the heart and soul of Denmark’s newest 3-Michelin star restaurant, and living proof that it’s never too late to turn things around.
We travel north of Copenhagen to meet the couple and sample the cuisine at Jordnaer.

My name is Alexander. I’m the co-owner of a ONE Michelin star restaurant, and I’m on a mission - to find inspiration in gastronomy. I love fine dining, good wine and sharing what I know with other people.

Time to eat my cheap noodles and watch this.. :D
Same
Too real
Shame on you 😊! I am too with below quality wine and champagne. 😅 I do look forward to this though!
It doesn't look at all filling. I wonder if he goes to KFC after 😂😂😂😂
Canned soup here!!!
I never appreciated this before, but you really do a great job with the pronunciation of the words
It truly shows how much respect you show the restaurant!
That is so true! I was blown away by his pronunciation of Jordnær!
Yeah. So many channels put no effort whatsoever into researching correct pronunciation for foreign words and just butcher them entirely...
He tries
He has a very Eastern European accent. He can't pronounce words like 'hotel' which is pronounced hootel instead of hottel (how he does it). But with the names of the restaurants he's doing great, very true.
Except “Rene Recipy” 😂😂 It’s pronounced René Red-Zepi.
The Copenhagen crime underworld gang is just savage.
They’re notorious for not even hand signaling when making turns on a bike lane.
Now apparently guilty of not using enough textures in their dishes
I sentence you to live in a condo better than 90% of houses in the rest of the world!
@@lefterismagkoutas4430 I'm sad that most people may not see your post 😂
Nah, it's even worse - it is not saying thank you to your bus driver when stepping out of it!
lol i often read this when people are talking about scandinavian criminals. They do shoot each other in open spaces and move kilos of cocaine and hash to and through denmark. Most of the drugs getting to sweden, which has a pretty wild underworld, is coming from denmark. Dont think that no danes are criminals because our society generally is good
I have the pleasure of knowing the chef personally and he is absolutely incredible..
He might have turned his life around, which ofc is great. But as an ex gang member he has most likely affected a lot of peoples lives in a very bad way.
@@Nse19 While this is true, and I would never tell the people affected by his actions to forgive and forget (this must be up to them), the question is from a societal point of view if you want to mark people for life for the terrible things they have done. After sentences have been served there must be a way back.
With that said, more effort should be put on prevention and helping efforts before people, mostly young men, fall through the cracks.
I see this as a chance for him to give something back and do good. Children is not born evil, they just do as the adults do, not as they are told. It is better to try to give something back compared to the alternatives in my opinion.
@@Nse19 He should apologise to them by making them eat loads of tiny dishes that don't fill them up filled with bug ridden flowers.
“Wake up, a new Alexander The Guest video dropped!”🗣️
200k for a bottle... madness, absolute madness.
I’m assuming that’s the price per case……there’s no way a single bottle could be that much.
@@alanledzep1967, he said per bottle. 😳
I just inherited 200K. Should I buy a house or a bottle of wine? 🤔🤪
I have a case. It's nice.
@@stanvanillo9831I have a warehouse of the swill, you peasant. 🤡
LETS GOOO! JORDNAER. we been patiently waiting. 🙏🙏.
Dude your pronounciation of Danish names are immaculate 😎
If anything kitchen and gang culture are similar in some ways due to the hierarchy system and how a lieutenant in a gang can mirror a Sous chef in the culinary system. also primarily the stereotype of how outcasts end up in the kitchen
And both love poweder ;)
The Winnie-The-Pooh at 4:25 was shockingly hilarious. Never lose your class!
The editors are top tier
This might be your best video yet! Your champagne/wine explanations were super informative and edited to perfection.
Keep up the good work!
5:00 I just want you to know that I appreciate this insight as someone not into fine wines. I didn't know this before and it shows me another level of complexity and intrigue that attracts people to these wines.
Such a heart warming story! Tattoos and sensitivity! You did enjoy the experience!
Huge thank you....Alexander.
Been following this channel and the chef for some time now. Incredible.....
We appreciate your truly honest reviews. For a Michelin starred restauranteur to review other starred restaurants, it would be very easy for you to go light on criticism, but you professionally serve up honesty. For meals at this tariffs, viewers deserve a true take, and you deliver. Thank you!
It is so pleasant to watch these videos. I hoped to win the dining contest as a tribute to my late twin brother, for whom a meal such as this would have been the highlight of his life. Thank you for showing us these glimpses into fine dining.
Alexander, thank you so much for a great video about Jordnaer. I had a chance to try their unique and delicious dishes last winter in St.Moritz when Eric and Tina were working in Badrutt’s hotel for 2 months. What a great couple!!!!! It was an excellent tasting menu with extraordinary dish presentation and super service in many different languages. Just GREAT!!!!!
These dishes are exquisitely beautiful
Alexander, whoever makes your suits deserves his own show.
great idea make a best suit in the world program just like the fine dining program he has he should do that just with suits
The brown beige one with the turquoise shirt in the narration shots is absolutely amazing
What an honest review. I admire your honesty and pure reactions to the dishes and quality of the food and service. I am a big fan!
Loved the twist on the swedish pastry thing. I can't remember the last time I ate those or what they're called but got memories reignited of my youth and my grandma making those but dipped in sugar. Warm, crispy, soft and sweet.
Those might be some of the most stunningly beautiful small bites of food you've ever posted! 😳
And that's saying something
This video was literally the pinnacle of your guys' evolution. A true Masterclass!
(Only thing I can pick a bone about is your un-even tie showing on the left, but that's being picky ;) 😂)
I was waiting for this one! i was an apprentice there and Eric is definitely one of the best chefs in the world!
" she fell in love with his cooking and then the man himself". A gastronomic love letter.
his video editing puts 99% of full time youtubers to shame
The presentation of those appetizers were stunningly beautiful. I loved the white one with the flowers
This video is very inspiring because of the chef's life story... It's never too late to start a new journey...
some of the most gorgeous dishes i've ever seen, i really like the waffle
thanks for the video, as always!
That star flower shapped appetizer is used in Anglo-Indian Christmas sweets called rose cookies. So wonderful to see it being used in other parts of the world.
It's inspired by the Swedish 'Struvor' which is a rosette in English, so i think it is the same thing. Deep fried waffle cake.
Beautiful dishes. Art on a plate.
Alexander I am a big fan of your work. I love to see more times a week a video. It must be a lot of work. But I advice you to invest in it now that you have momentum. Not just for me and other fans, but this will grow your channel fast as the algorhytm is favored to channels that do more uploads. Otherwise you go on a very slow track to a million subs. And I love to see you get there.
An admirable story, and a great video. Thank you for making it.
Thank you for sharing with the rest of us.
Love all the info on the wines
This is one of the restuarants I would love to visit (but money is a problem). For the main reason - the background of the owner. Amazing story and I am sure it reflects in the food, that is something I would love to experience some day! Thank you for another great video. :)
The restaurant is in my local area.
It's been there for 7 years and has slowly been building itself to a better and better standard.
They've had to replace the Michelin Star sign outside a few times :)
$500 is insane no matter what, I remember the Indian restaurant in Dubai which to this date is probably the most impressive I’ve seen and that was only $130
I highly doubt it costs the same to make the food. Denmark is one of the highest taxed countries in the world.
@@cme1478963 Dubai is basically run on slave labor.
500 euros, denmark is expensive, i live here. Its 3 michelin, once in a lifetime for most people. But yes very expensive
For Denmark it's not even crazy expensive. It wouldn't be out of the realms of possibilities for a regular restaurant visit be around 300 euros for a 3 course meal. Going out to eat is a luxury here, and we like it like that most of us do not go out to eat or do it very rarely.
And it's not "boohoo" us, we just actually don't care. The default is that you cook at home. The median salary in Denmark is also *alot* higher than India, when salaries are higher prices are higher.
@@omega1231 Correct its definitely no crazy with wine and say a cocktail to pay 250-300 euros for a very nice evening each. But you would do that one every 1-2 months at most as you said, its a luxury
Great vid as always!
I would like you to visit Antiqvvm in Porto Portugal
They have 2 Michelin stars and it’s not as expensive
Great staff and food there
Didn't even notice this was a Danish chef and it ended up being a restaurant literally 1km away from me. That's crazy - really inspiring story!
some of us are not as lucky to have a brother working at Noma. He still had to work hard though. but some of us had to start from zero without anyone in the industry holding our hands and no initial contacts. glad that he found his purpose and he definitely earned it and made the most out of the opportunities presented to him. not everyone would have made it.
Am I the only one amazed by his suit selection? I'm more curious to hear about that. (I do believe he had the same suit for the Alchemist episode located in Copenhagen, so it might be a Denmark combination ) :)
Really enjoying the extra information on wine. It helps folks to understand why some products might be chosen over others!
Great video, restaurant and story of the chef
Funny that tats and topknot can be gangsta in Denmark. Here in the USA it means "I'm working at an Apple store until I get my food truck going"
Hi Alexander, this reminds me of the British TV series Pie In The Sky. The guy in the TV show was a big man and a detective, and Eric is a big man and was a crook ! Ha ha ! In the TV show, the guy's wife managed the restaurant. Same here. First Michelin star within 9 months, wow ! Very impressive. The food and wine looked great. The staff and owners warm and genuine. Thank you, Alexander, for another gorgeous video !
Yeeeees! Jordnær is such an amazing place. Went there while they were still two stars, not long after they had also had a fire, the place was amazing, Eric is an amazing person, as is his wife, Tina. The food was amazing too, I am looking forward to my next visit. I recognize a lot of the dishes, as well.
It didin't look like much food ... I was still hungry after watching ... great review
it's meant to be art rather than filling you up. but the point is the dozens of dishes will fill you up eventually.
@@yeshuaislord6880exactly tasting menus are deceptive, ive never left hungry, just financially lighter but that said, spiritually happier.
It's the taste menu, so it's supposed to be many small dishes like 20 appetizers, instead of 3-5 meals.
a great exposure of how thanks to food people can overcome unbelivable life problems ,
I like the little cutaways where you inform us! Thought they were a bit too many and too long this time though. Great video as always!
Been looking forward to this restaurant review🎉
Chef has a similar story from movie "Burnt". Very interesting 👌🏼
1 hour gang!!
I had no idea that there was a 3 star restaurant just around the corner, i pass et every day. Thanx
Im a chef in Denmark. And Erik is a legit psychopath. Everything is a facade and he treat his staff poorly
It certainly looks like a facade. And I also doubt that they could finance all that with just a golden watch and a diamond...just saying.
These videos have such a nice feeling to them.
Amazing story >>> good for him. BT 🇨🇦
I absolutely love the reviews of the restaurants, the cities the restaurants are in, the chef and his/her background of said restaurant, the details of each dish, and the process of making each dish etc.
I cant be the only one watching these who just does not care about wine as much and gets frustrated when he spends about 15 seconds on a dish then seconds 2 minutes talking about the wine and its history they are pairing it with. Ive been to Michelin restaurants before and dont get me wrong, I very much appreciate the sommeliers and their work but thats probably 10-20% of the entire experience of the meal.
"Our next course was a so-and-so fish in a so-and-so inspired sauce. The texture was very good and the taste was well balanced. I thought it really represented the chefs abilities. Let me spend the next two minutes giving you a history lesson of the wine it was paired with and why its so amazing"
never clicked so quickly
Finally Jordnær 😍 I have been to Jordnær 3 times and I do not think I will ever have a better meal.
The 2 first times it was better though. They seemed a bit overworked the last time so I wonder if we have seen the best from them.
Is that a larva underneath the pink flower at 12:34? You only see it move for a split second. Goes to show how fresh the ingredients really are!
yes it is :D Good catch!
I was not expecting you to mention Lars Ulrich
I'm watching this while eating a frozen pizza
Excellent ❤
Let’s talk about this suit tho 🔥🍫
Tried to go here twice, unsuccessfully trying to stack Noma and Alchemist trips but it looks like my next trip will primarily be for Jordnaer!
Love those Georg Jensen pitchers!

Mr. Alexander, in Indonesia we also use that tool to create sweet treat called Kembang-Goyang (Shaking-Flower)
Just goes to show you that it's never too late to turn around your life and remake yourself 🙂
First Video without Krug 😢
Would it ever be possible to include interviews with the head chefs/FOH in these videos? That kind of BTS insight would take these videos to an even higher level.
I'm a huge fan of your content!! looking forward to seeing what's coming up in the future.
Amazing story !
This chef inspires me
Will you come in Switzerland once? If so, do you have any ideas? Keep going 👏🏻
I once stayed at the hotel for a business trip ... i had no idea about the restaurant ... fml ... what an opportunity missed! :(
You have got to review Quay in sydney
Go to Klein Jan in South Africa!!!
The Love Story 💖
I was born and raised in København 🇩🇰
Yes and I went to High School at Aurehøj Amts Gymnasium ( from the Oscar Winning movie "Druk "" Another Round" with Mads Mikkelsen) just across the street to Chef Eric Vildgaard's Lovely 3 Michelin Star Restaurant Jordnær 💖💖💖
I would Truly Love to Dinne here soon 💖
Congratulations to the Chef and his entire Team
For the price I was personally expecting slightly more, however I don't know much about how much it costs to find all the ingredients neccesary, I just remembered about that one restaurant that Alexander said he liked which had (I think) 17 courses but for 250$ without the wine pairing (But maybe that restaurant had worse tasting food, I honestly dont remember it perfectly)
Maybe my fav fit so far
"Japanese chef who cooks Italian cuisine in Germany".
I don't think his career choices were innocent accidents.😂
Love this channel
His brother is a saint...thats a gift that cannot be repaid. That job changed everything for him i think it was overlooked. For 500 euros i find food like this to be everything that people scoff at when it comes to find dining. I didnt taste it but its a little insulting
Ouch! You never want the only adjective used for your dish to be “clever”
the danish gang of 13 year olds, who were sent on a sailing trip... just horrifying
Lol I used to bike from school with my classmates to get lunch at the pizzaria right in front of that hotel 😂 still the best chicken froccasia sandwich I ever had
It didn't even occur to me that Denmark had gangs. lol.
Awesome video 👍
Very nice suit, Sandor!
My two favorite genres to watch are Sci-Fi and fine dining videos because both depict futures I wish I could experience, but it's unlikely to happen in my lifetime.
Dear Sandor, I only watch your videos because of your suits 😂
I’ll be there . One day , one day
this is a menu i myself would be disappointed in
My bad, learned a new thing. Smultron is "wild strawberry" ... English should adopt a more distinct word to describe this delicacy.
Great clip! My problem is the same problem I always have with these clips. I absolutely detest the taste, smell, and sight of fish. 🎣 I’m ok with shellfish, but all other fish make me nauseous 🤢. So in a fish heavy clip like this I find myself fast forwarding through much of it. Anyway, you look like you enjoyed it 🤙
What a terrible comment and preference.
It's never too late to change your ways, if your brother gets you a job at a michelin star restaurant lmao
Love how the Dutch think of design. Love that environment. This story is a good example of “No Pain No Gain”.
@Broken Baker, they have waffles 🙃
Please, visit hotel de ville crisier in Switzerland.,3 michelin star
This place looks like it was inspired by the first NOMA. Redzepi Effect. TILL DIS DAY! In my Deontay Wilder Voice...
