- Опубликовано: 17 фев 2024
- Today, we are back in Copenhagen for the restaurant that turned Denmark into a gastro-nation.
Arguably the best restaurant in the world will close for good at the end of 2024.
It’s name is Noma.
Three years in a row, from 2010 to 2012, Noma was named NO.1 restaurant in the world.
They would go on to claim the number one spot a total of 5 times.

Oh, but I did - and even though I will rarely eat at this level, being a metal-worker; I really like your videos and watch each and every one of them.
When are you gonna visit Tribeca in Heeze the Netherlands? That's a hidden 2 star pearl :)
I was lucky enough to find this channel right around the time it started. You deserve a million subscribers the content is just as good as the beautiful food we have the priveledge to see in these videos and there is literally no other channel doing what this channel does for youtube! Please keep the amazing content and work!

I been here for a quite a time, I continue as you do, you are getting better thank you
04:43 incredible gesture to reserve and discount 4 of its 40 seats for students so they too can try a Michelin experience. Amazing!
it's for culinary students - not "normal" students. Perhaps so they can be inspired for their later careers :)
@@anton4773 thanks for clarifying! Nonetheless still a great initiative
Question is how it expensive it still is. Think there are even in Copenhagen a lot of good Michelin restaurants which are affordable for a student. But yes would be nice if more restaurants do that in general.
@@anton4773 It´s also for hospitality students. So waiters, caterers and a few others. The price is 335€ including wine pairing.
So I would say it's an increadible price.
they still need to pay 400 euro+ per person, not so student friendly@@anton4773
I was a intern working there a few month in 2010 gave me an experience and knowledge i still use to this day.
Where do yo work now?
@@NoahEats i Work at a local wine shop + exporting a few bottles to Hong Kong a year.
@@winejaeger sounds like a cool job
would u share a knowledge?
How did you afford to live there at the same time?
Its a shame that noma will be nomo.

How your videos are free I will never know. Your quality & content is elite.
Its not free i pay premium youtube
Me too… and these videos are the reason why!
It is free... what are you on about. @@goldeneglikengold2537
There's nothing free, first there's ads and then you pay with your own time.
If he's charging money, not even 5% would pay for that.

So glad to see this. My family just visited a couple weeks ago and it was incredible. Thank you for this!
wrr, no such thing as simmerx or excix or etc, sayx, can sayx etc any nmw s perfx
Alexander you're always so well read on the restuarants and it's chefs, makes it so much more enjoyable to watch your content.
Agreed!
This looks incredible, but with half the dishes I couldn't tell which part was edible and which part was just for decoration 😅
All of it is edible if you're brave enough
I can't get over your enthusiasm for the places you visit and the food you eat! I can't wait to see your next video!
He does a great job with sharing!
I love your channel! As a guy in the industry it's really inspirational to see everything you have to show and the love you present on every video!
PS: when its El Celler de Can Roca? I would die to go and see!
😋😋😋
Took a look at their menu 🤤
I wish his accent wasn't as thick cause it sometimes hard to understand what he's saying
Another excellent and atmospheric report, precise and knowledgeable. Very good categorisation - and so refreshingly different from many other reports that have little to offer apart from praise for the "best restaurant in the world". Well done!
thank you! always glad to see another new upload by you!
Agreed!
I had the privilege to dine at Noma during the vegetable season last summer. What an incredible moment it was! Really fun to see how the Game & Forest menu looked like. Thanks for yet another great video!
I'm no foodie, and your channel was the one who introduced me to fine dining. But even I, knew about NOMA. When someone outside the fine dining world, knows about NOMA, it show that they are truly a one of a kind.
Noma is one of many amazing restaurants!
I've heard of El Bulli, but not Noma before this video unfortunately.
@bobmularky7456 hope you can go before they transition to the next opportunity
@@bobmularky7456 Noma, have been the sh.. for 15 years. Like El Bulli. But there is a contender for crazyness, The Alchemist.
No, it shows there's a load of media buzz.
Never assume something is great based purely on coverage.
Once again, great video - Elegant as always..I hope the best for your channel in 2024 - 🥂
Another superb review Alexander, I always feel like I am your fellow guest in a world of incredible luxury, skill, dedication. Stellar work please keep it up!
So beautiful. Thanks Alexander!
The one we've been waiting for.
You're very fair in your review. Noma isn't the best restaurant in the world. It's not even the best restaurant in Copenhagen.
But no other institution has done so much to reinvent fine dining in the last decade or so.
Absolutely agree, very accurate. There are a couple of 2* places in Copenhagen I'd rather go to but there is no denying what a huge impact Noma has had.
been waiting for this for a while. we dined there during Game and Forest in October 2023. It was absolutely phenomenal, and was treated to a tour at the end.
Not even close to my favorite restaurant, but still a top tier just because of how innovative it is, and how different it is from any other restaurant including the other big names in Nordic cuisine. You go to have your world expanded and they nail it every time. I had this exact menu a few months ago.
What is your favourite please?
What is your favorite restaurant?
@@tjbooker8585 @NoahEats easily El Celler de Can Roca
I had the exact same menu and while loved a lot of the dishes, our views on the last dessert is incredibly different. While you called it your favorite, both my wife and I hated it. A bitter, gooey slime coated our mouths after that dish and didn’t go away until brushing our teeth three times. It was by far the worst dessert I have ever tried in my life. We are happy to have gotten to visit Noma before they close down and will remember the visit with mostly happy memories for life.
This is one of the wonders of gastronomy. For some its the best thing they’ve ever tasted, and for others the worst.
Have been waiting for this one 😊👍
Once again an amazing video 🥂
Hey Alexander, great videos! I used to work at a michelin restaurant myself so its great to see the way you portray them. I would highly recommend you visit Restaurant Grön, it is located in Helsinki and is in pursuit of its second start. It is very similar to Noma in their approach to food and emphasize plant based cooking!
Fun fact, in 2019, the rules were change for World's 50 Best Restaurants list, such that previous winners would no longer be included. NOMA was an execution to this, as it was considered a brand new restaurant after reopening.
Fabulous presentation your enthusiasm and energy just come through bn following you from the beginning keep up amazing work thanks 👍👌🙏
I was super interested when I saw you were doing a video on Noma. I used to hear incredible things about this place but have heard of a few horror stories recently. Your experience seemed great, though; glad to hear it.
horror stories about the food? i remember when it had to close down because of bad shellfish. Or the times Redzepi wasn't in control of his temper and acted like a danish version of Gordon Ramsay.
Although i highly respect Noma from a culinary perspective, i find it problematic that a Restaurant can only exist because half of the staff isn't even paid.
@@captainsubtext7446
Horror stories because of the issues with staff.
Such a let down.
A little more than a year ago I sat at the shared table and made 3 new friends. It was an incredible experience. We still keep in touch and one of them even works at another Michelin 3-Star restaurant.
Even with 200 000 subscribers this channel is seriously underrated. This channel is seriously amazing.
This channel is a new favorite of mine
Wow your videos are always spot on, and very professionel.
💰🤯💯Your content is truly royal, everytime I am having my dinner I watch your mesmerizing videos and I feel like that I am over there and having those meals the background music the explanation of the menu the precise details of dishes is truly unique.pls do make videos on local best restaurants,I know it isn't ur type but pls try.
This seems like a really special place I would vibe with! Incredibly inventive menu, which is always great to see
Alexander with yet another great episode
Very interesting in informative video as usual. Soon coming to Esztergom to "compare". Minden részt láttam, Gratulálok!!
"Even healthier than regular wine". Wine, or any alcoholic beverage for that matter, is unhealhty. The idea that alcohol in certain amounts is good for you, is a myth that modern science is working hard to debunk. Doesn't mean it's not delicious, but let's not delude ourselves.
Thank you for sharing your experience
Excellent! Thank you.
Excellent video, as always.
He never misses 😮💨
Excellent episode! Thank you for providing us with such pleasant, well presented, unique content. Maybe i am missing even nicer , proper word :)
I completely understand why you select the wine pairing with your meals, but if you ever bring a guest who selects the juice pairing, I would LOVE to see what that consists of.
Noma is a beautiful restaurant. Simple, functional and yet sophisticated and inviting. The dessert courses looked amazing. Thanks for another gorgeous video!
Love your videos. Do you think you could do a video reviewing your favourite wines by price class?
As an aside, I see that your enthusiasm for food is evident. That said, your couture, jewellery, etc., all speak of someone who has not come from a hospitality background. To hear the backstory about what your occupation was and what led you to want to invest in your eatery and to fund world travel to explore higher-end dining would be interesting. As a chef of thirty years who has worked in that world, more often than not, most of the clientele are not fellow workers within the industry but people who have worked vastly different roles and positions, and yet here they are with the same conviction towards food, even though they never explored as a worker, but as the diner.
Interesting comment, I hear a cookoff with you and Alexander coming!
He's already made a video about himself, and his history where he visited his own restaurant.
@@decomposedcorpse5186 I believe he co-owns it and is not present every day or plays a hand on roll within the business.
@@NoahEats , I'm okay with that. I have cooked for many people. I have worked in three Michelin restaurants, two top 50 eateries, and a lot of well-respected places in between. I'm currently on chemotherapy, so I would need some advance warning; aside from that, I've had the likes of Chef Ramsey, Trotter, etc, all choose to dine where I was the head chef in my day..so cooking for anyone doesn't intimidate me.
Wishing you all the best in your recovery Chef ❤
Alex, u are the man!
Great content/channel, thank you.
I will never afford it, but it is so cool to get an insight.
Cheers from Germany
Thank you for visiting Denmark and showcasing our New Nordic Cuisine!
😁 We are very proud of this one 😋
Im getting strong The Menu vibes from that kitchen
That thumbnail dish is hilarious lmao. Tell me I'm not the only one seeing funny faces in that dish with those funny eyes and mouths.
My experience was very up and down at the original Noma (I went in 2015). A few excellent dishes and a few that were either underwhelming or just not enjoyable. The service was excellent and I tasted a few ingredients I'd never tried.
Not one of my better 3* experiences but there's no denying the impact Redzepi has had on nordic cuisine.
Great vid as always, Alexander.
Yet again a great video!! Quality of your videos and the professionalism of you reviews are magnificent 👍🏻
You had me all the way up to Reindeer Brain😳
Agreed. I draw the line at brains, eyes, tongue and testicles. Regardless of how good it may be, I would lose my appetite.
Honey, wake up! A new Alexander the guest video dropped!
LOL
im so jealous man the vibe here looks amazing
Hi.the way you review the restaurants is unique.you make us want to go and taste.
Thank you Alex
As a vegan, I likely will never experience one of these places (except eleven Madison park) but your channel is exceptional. The quality is unmatched, and the reviews are genuine. Not one ounce of pretension. The comment about being served in your mother tongue being magical was lovely and heartwarming.
Geranium in Copenhagen is vegan as well. There are lots of vegan micelin star restaurants, try checking out the green michelin star listing. I also love Ark in Copenhagen (1 star, phenomenal), or it's sister restaurants Lupa and Beyla. Give it a google, i'm sure you can find one
The vegetable season is vegetarian and you can for it to be vegan. I think it’s one of the few high end restaurants that have a whole season for vegetarians/vegans
There are many of 2-3 star restaurants that are vegetarian and offer fully vegan. I can recommend 'De Nieuwe Winkel' in Nijmegen in The Netherlands, if you ever happen to be close by. 2 Michelin star, everything they serve is made in their own food forest
Fantastic, as usual. Not only great videography, but wonderful narrative as well. Also, you should start a fashion channel. You must be the best-dressed food critic on YT.
normally would agree...as much as i loved the colour...the fit wasn't my fav.....but excellent presentation
He can easily do an episode on his jackets. They look amazing.
What a different experience from your previous visit to Alchemist.
2000 euros for 2 people???
Personally, something I would absolutely never do, even given I had the money to do it.
I'm over here watching RUclips behind my computer with my spaghetti, mushrooms and beef I just cooked up for no more than 5 euros worth of ingredients, with a bottle of water and lemon and I'm more than happy.
Still, I love that you visit everything that you can in the world and I've been enjoying watching your content.
The ingredients are expensive, but it's the labour that you pay for. World class chefs making artworks for you

noma will be nomo :D nice one
Elegant restaurant,elegant video.
hah, didnt expect to see Qvevri Saperavi out of nowhere😅
my favorite restaurant in the world!!!
I have a question :) I was at a fine dining restaurant in Copenhagen a few weeks ago and me and my friend finished all of our wine paring glasses... we were the last guests to leave. The waitress was "impressed" how we could finish our drinks. Most people would leave a lot left
So my question is: Do you or people usually not finish their wine glasses? I am like: I pay for this, so I gotta enjoy it :))
I mean, every chef trying ambitious things in the late 2000's knows this restaurant and some of the incredible techniques innovated there.
I can't believe it's over.
You should also try KADEAU in Copenhagen, simply amazing.
What a beautiful restaurant ! An another great video by the #1 guest!
can't wait to be the menu'd
You should really visit "De Librije" in the Netherlands sometime :)
As someone that's achieved a few rosettes and devoted my life to cooking, i have no idea what any of this tastes like and i'm too poor to ever find out. That's both terrible and exciting. Thank you for that René and Alexander.
We have a reservation in May. We are excited to eat there before it closes.
Damn we have the same taste, I can enjoy and appreciate natural wine and dishes, but for me I am still for the full flavour savory dishes (foiegras, truffel, tuna, krug) still loved this video. I would be honored to eat there before they close
Great video and new subscriber! The thing I appreciate in particular, relative to other "Food RUclipsrs", is the thoughtful description and reaction to the food. It seems most RUclipsrs simply rely on "oohhing" and "aahing" and telling the viewer that something is "AMAZING!" It's clear they don't have particularly sophisticated palate or the ability to articulate what they are eating.
I've only seen 2 of Alexander's videos (more to come!), but his articulation of the taste profiles with a full description of the ingredients and his honest reaction are sorely needed on RUclips. The videos have been much more informative and help paint a better picture of the dining and tasting experience.
Regarding Noma, I can see why a lot of comments note how innovative the cuisine is at Noma, but generally speaking, it seems people don't leave the experience naming it their favorite restaurant.
To me, it looks like a science experiment and a "mission" first, with the culinary enjoyment being tertiary. Frankly, nothing looked particularly appetizing and Alexander didn't seem to enjoy the meal that much. His reaction aligns with how most of it looked.
I've been to my share of 3 Michelin starred restaurants, including Per Se, Le Bernadin and Eleven Madison Park (I'm from NY, obviously), but they don't sacrifice flavor for experimentation. They manage to meld the two into an innovative whole.
Noma's motto seems to be, "we're going to give you some weird shit we concocted in the lab that utilizes the best ingredients of Denmark. Hope it tastes OK!" That approach obviously has its adherents, but I don't think it strikes the right balance for the diner.
Agree with this and I know where I would rather eat if given the choice of any of your NY restaurants or Noma , and I wouldn’t be eating any Reindeer brains for a clue .
Haha! A game changer, eh!? Nice pun, considering you tried the Game & Forest season experience.
If that’s one of the worlds best, well leave me out!
1:06 pretty sure he didnt drop out of high school, first because high school in denmark is a completely different thing and the people that go there are usually around 25-30 years old, and because you are legally done with your education after 10 years of school, and since most people start school at 5 in denmark, he probably didnt drop out, he just finished school and went straight to culinary school, which isnt even unusual to do if you want to be a chef in denmark. a full education in denmark usually looks like this:
5-6 years old to 15-16 years old; mandatory school
15-16 years old to 16-17 years old; afterschool, which is basically just a boarding school where you dont really do much school and you just chill. people sometimes skip this stage
15-17 years old to 17-21 years old; gymnasium, which is kinda the danish equivalent of american high school. how long this part is depends on which “ve chosen. for example, the shortest ones are HF and EUD, which are only 2 years, and the longest is EUX, which is 4 years. STX, HTX, and HHX are all 3 years with STX being the all-round and most common one. culinary school is an EUD
18-21 years old to 20-30 years old; university, but this one isnt as common as the rest. you also need to go on a gymnasium line that ends with X in order to even be able to get in
high school in english = gymnasium in denmark
Don't be dumb
He went from an STX or something to study cook as an ervhervsuddannelse
grade 0 to 5 is elementary school, 5 to 10 is secondary school and 1.g, 2.g and 3.g is high school.
I noticed several empty tables. Did these remain empty?
love your reviews!! and really appreciate the english cc's
How did you achieve to book a table? Noma is more difficult to book than the CL final
NOMA has been on my bucket list ever since I was a kid, hope I can score a reservation before they close 😢
Reindeer tongue are tasty! Did not know it’s a delicacy so I gave a lot to my dog. The family that owned the meat weren’t too impressed 😂
Who needs confidence in cooking when you have the Redzepi!
Was probably one of the biggest disappoints ever. Went for seafood season. Forced wine pairing for Friday lunch with almost solely natural white wines which none of the 8 guests we were enjoyed. Concerning food, NOMA is more interested in « shocking » its guests with presentation than actual taste. Enjoyed only the first of the plethora of dishes. Long story short, not a bad thing it’s the last year
Some of the items served in these high end restaurants I find unsettling. Wouldn’t be able to eat it.
I have often considered going to noma and i have never been able to get a table, even when booking 6 to 18 months out. Pretty sad
Holy shit these videos are so fucking good hella underated
Can you do the Alan Ducasse dorchester🙏
12:49 you paid extra for the fermentation guide. You acted like it was coincidence that the chef came by and explained everything xD
I hope you ever visit/experience De Librije in Zwolle (Netherlands)
Great video. Maybe we should call Rene for "Rene Recipe"
Damn, I won’t be trying out noma this timeline then :(
The price is completely crazy😅. For 600+ Euro I recommend to fly to Japan and have any food there that costs 6 Euro. You won't regret it.
Can you do Eatrenalin in Europa park?! I would love to see your toughts on this place
Please go to Librije or inter scales in the netherlands
