In adult fish, when conditioned, the females are more plumper and males more slender. Another way is to check their genitalia; males are pointy and females are blunt. I hope this helps.
I am not sure of age, but my started breeding at around 3 to 3.5"; but if I have to guess the age, I would say around 3 yrs old, but this is just a guess.

Cooler water (2-3 degrees cooler) tends to trigger them into breeding.

The parents lays the eggs in the jar and the jar is inside the breeding tank.
