    Beautiful Farinata! I like your method the best as it is not cooked in oil. It is both delicious as it is nutritious! Do Italians ever use lentil flour for a similar flatbread? I've had it in Indian cuisine and loved the flavor as well.

    Francesco, I don’t have grana padano cheese but I do have some Parmesan cheese in my fridge, could I use that instead? Made my Farinata batter this evening but I was looking online for a yummy topping 😋 Can I use a cast iron pan or is it better to use a rimmed baking tray?

    is the oven heated in advance? what temperature? nad then for 15 minutes?

      Make sure to add enough oil if you don't have a non stick pan

      The highest setting- just like when you make pizza.

      @@vardarazdemiranda5036 the highest possible temperature and place it at the bottom of the oven where it is hottest- home ovens are never as hot as professional pizza ovens

    the proper farinata pans can be ordered online, although not sure what brexit means for the price these days, i ordered mine before

    Why not flip it like any pancake or flatbread... I don't have a skillet that can transfer into the oven. Is there a real difference ?

      @@angelocampisi you could flip it like a pancake but it won't get the nice oven-taste. You can put aluminium foil on the handle of your regular skillet and finish baking in the oven- it only needs to be in there for a short time and I never had any problems 😉

    i gave up on farinata/socca in the end because i realised i was never going to master it without a proper wood fired oven, or at least a pizza oven
    also, do not assume indian chickpea flour, or besan, is interchangable with italien chickpea flour

    Aussie? Can you make your own chick pea flour by blitzing dry chickpeas in a blender?

      @@peterbreis5407 I've never tried, but theoretically it COULD work, although flour is usually made by grinding and not blending. You can easily find it at ethnic supermarkets though.
