No of course, they are many ways. You can remove the seat and the trunk (and it is easier in that case)...BUT it takes 2 hours to remove the trunk ! So, I do that only when I perform the checking of the engine valve. But if you just want to remove the spark, the procedure in that video is probably the shorter..

No, you do not have to set the spark plug gap. You put it on the spark up to maximum you can do (you will "feel" a notch when it is OK)
