Easy and Creamy Vegan Potato Soup (One Pot Recipe!)

- Creamy, hearty and made with a handful of pantry staples like coconut milk, this vegan potato soup is sure to warm you up! This recipe is made in one pot in just over 30 minutes.
Ingredients:
2 pounds Yukon gold potatoes cut into one inch pieces
3 tablespoons vegan butter divided
1/2 cup finely chopped yellow onion
1/2 cup finely chopped celery
1/2 cup finely chopped carrot
1/2 teaspoon table salt
1-3 cloves garlic minced
3 tablespoons all purpose flour
3 cups vegetable broth reduced sodium
15 ounce can full fat coconut milk
1 teaspoon soy sauce
2 tablespoons nutritional yeast (optional)
1/4 teaspoon freshly ground black pepper

Made this twice now, topping it with dairy free cheddar cheese, scallions, vegan sour cream and imitation bacon bits to make it loaded potato soup. So delicious!

Every time I make a new to me recipe, I follow it to the letter the first time and if I think it needs to be tweaked the second time I make it I do so. I made this 3 days ago and followed it to the letter ( Oops , except I didn't have soy sauce so used Braggs liquid Aminos) . This soup was soooo good, sooo perfect. I would not change a thing. I will be keeping this recipe in my rotations for sure. Thank you for such a quick easy delicious recipe!

Very healthy soup. But did you know that the scent of a hot teflon pan can kill a bird? Wonder what does it do to us? We're larger, so slowly what does it do to us?
You can use any kind of pot you want to make this soup. A ceramic dutch oven would be great if you're wary about teflon.
Can you taste the coconut?
There is a subtle coconut flavor.

All that coconut fat and vegan butter gave me heartburn!!!
The soup is on the higher fat side- if you like the recipe but want less fat, you could use light coconut milk instead of full fat.
1/2" cuts are "chopped, 1'4" cuts are "diced", and 1/8" cuts are "minced". Why don't any of these "chefs" know this and use basic kitchen terminology.
