Made a batch of Peach Cobbler Rum last year and still have some left over and aging. Let it ferment with brown sugar, molasses, nutmeg, cinnamon, vanilla and a bag of sweet feed. I let it sit for about 2 months before I even checked it. Had two 77 gallon barrels of mash. Used some of the mash in a couple of 1 gallon mason jar thumpers while I ran it. Collected it from about 160 down to about 40 proof. Even tempered down to 120 proof, that shit had a strong grain/ rum alcohol bite. But you caught all the peach cobbler flavors. It kinda had a 99 peaches mixed with a peach snaps on the front with a peach cobbler like cognac in the middle and almost an everclear on the back. So im hoping a year in a old makers mark barrel calmed it down a bit.

Went to subscribe and I already was and the other thing is I picked this video out of all the others that came up so you give me the vibe I’m looking for I guess . I kinda laughed when I realized it. Yeah you’re my type a dude.
Phil and some times it may take up to a week and them the favor comes threw yummy i did a spiced rum let sit for two weeks and them distilled it and then put sultanas for two more weeks so it come out like a white rum but man it was so good
Lots of good information in the video. I did an Apricot Wine last weekend with locally grown 'cots using an almost identical process to yours. Can't wait to distill it in my custom CopperStillCo still. Thanks for the tip on skipping the thumper.
I felt like this was an actual lesson. I feel I learnt something new. The only thing gets me is how you know exactly heads from hearts and tails. I know you said you use smell it's still over my head though. This was dope. Thanks for the video.
Good on ya for successfully doing a one-and-done run! I've not yet done a brandy, but I've read that you have to dance on the edge of keeping some heads for the fruit flavor to carry over? Age will mellow it. Could you keep the heads for the next run? I'd love to see a thumper run just for taste comparison!
I'm chasing that peach ring flavor coming out of malted rye, so I'm making a split brandy. So I'm Malting some local abruzzi rye adding local nc peaches and some brown sugar. Was thinking of adding some more fresh peaches in the vapor path. A lot of the fruit flavors come out in the heads because those flavors are so volatile, which is why they tend to fade away over time. Another great video!
There's a big strawberry farm down the road from me. They usually sell them pretty cheap whenever they get that late in the season but yellow jackets are so bad this year I don't know if they probably have any. It's a pick your own type of deal
With all the extra you added into it how much do you think each one of them quartz would be worth that was some good ingredients that you had put in there love your videos keep it up
once you run that through your still... how do you get that smell and flavor profile out of it? im having issues trying to get a flavor profile out if my still.
Ran across some a few years back that was really best I ever had , 4 or 5 buddies shared a jar out of a saddle bag when it was 100 in the summer , nobody reached for chaser... Asked for 2 years from same folks, never seen again was so sad
I agree your technique will give you the effect you are looking for, but adding water to your boiler before distillation doesn't dilute your product or "water it down" as much as pack the ratio between Alcohol and Water: Imagine you have a container filled with green and red balls, you adding more water adds more of one color making the other stand out more and be more distinct when they are sorted. ~ Great Job!
Oh, and I've seen people go to great lengths to make the same brandy recipe the same way even having a still JUST for the 1 kind of fruit brandy and all kinds of barrel secrets I can't go further into.

It would seem to not occur to anyone that he stole peaches. A case is 12 lbs but you added more from other boxes. Does this not seem wrong to anyone else or are we all cool with theft?
