I did a similar test several years ago, also doing an all grain bourbon mash. I ferment on grain and I liked the different characters each one produced. So now I use BOTH, equal parts Dady and Fleischmann's bread yeast in all my bourbons, give it a try, tastes fantastic.
i've tried reusing yeast, it always goes overboard and "explodes" all over the floor. so is there a specific amount that you use that starts the fermentation but doesn't get it too active?
Great test I think some of it is personal taste I've used Red star distillers yeast.. and my last batch fermented way to long think my yeast is dying or almost dead.. been a while gonna try one more time before I ditch it tried pineapple last attempt. Think I'll try sugar wash just for fermentation purposes... can always flavor or re run it with another mash... for educational purposes only!!!!!

I've always associated it with high gravity mashes, and I run lower gravity mashes. When I start making shine again I'm going to do this test again and see what happens. I may prefer daddy if it gives the sweeter taste. Shine On Phil!
I did this test myself before I saw this video. Taste was basically the same BUT the alcohol level of the bread yeast was 10%+ higher than the brewers yeast!! Also bread yeast produced the result a week sooner than the brewers yeast!!!
Great Vid Phil. Really like the heads up comparison blind taste test. This goes to show that taste and preferences are all subjective. In 3 months I’ve learned that everyone likes everything a different way. Can we see DADY vs Bread Vs Wine yeast on a sugar wash? Super small batch just to see if any can produce a more neutral / less fire taste?
I know that it’s mostly about the taste but maybe do a smell test and taste bring coffe beans as it’s supposed to help with distracting the smell to help reset the nose
I'm new to the hobby with only six runs under my belt. The first and only corn mash recipe I tried called for 1 tbs bread yeast and 1-1/2 tbs. Distillers Active Dry Yeast. In a 5 gal pot. So that's what I did with others which have been sour mash. I'm gonna have to try one and then other like you did.

Not sure what bread you used but I've always had people say bread yeast is smoother and more flavorful. I think using people who are used to drinking high proof shine at a high proof instead of everyday shine drinkers threw your results off.
Saf instant red bakers yeast is my fav,chews thru rum wash like a Mf! Whisky I’ll do half saf red n half whiskey yeast n no probs at all,saf red likes the higher temps,I get away with 32 to 36’c no dramas,flavour wise I get a hint of yeast but as I can’t get dady in Australia it’s not a flavour bomb problem! Hey if it chews thru the mash n gives me the alkihol i ain’t gunna give a flyin fook 👍
Should have proofed them both down to 80. The 120 is a little overpowering on the senses. I always proof down when making cuts as flavors become more discernible...but that's me.
Y'all wanna hear something funny.. ... It took me the whole video to figure out what a D.A.D.Y yeast was. I couldn't find that brand anywhere on the internet.. All I've used so far is Rwd Star and Fleshman's..lol... THEN I realized it was an acronym.....

I have a old yeast culture from a well known distillery in VA. I've used it for several years and keep recycling it and reusing it.
