The canning pineapple zucchini I've seen (and done) before but this one is new to me. I really enjoy any dried fruit, the chewier the better. Can't wait to try this one!
This is very similar to zucchini gummies I make. They are best with oversized zucchini where you have to scrape the seeds out and then cut in half moons. When they are dry they look like gummie worms and the kids love them. I initially would use a concentrated kool-aid mixture (cherry is delicious) however wanting to avoid the dyes I have started using juice concentrate. Never thought to just use regular juice so I will try that. I imagine the flavor would be less intense. Also vacuum sealing is a good idea though like you said they don't last long. Thanks!

I just boil the peeled and sliced zucchini in juice concentrate (you can also use concentrated Kool-aid if you don't mind that) as I mentioned above until translucent then dehydrate until dry and rubbery not hard (about 12-16 hours at 125F ?). Sometimes I shake them in a bag of lemon powder to give a sweet and sour taste.
I don't think the flavor would be as intense with just soaking, but it wouldn't hurt to try! I would definitely do an overnight soak to give it as long as possible to soak up the juice.

Perhaps it was in the video and I missed it, but at what temp did you run your dehydrator? 125, since it's a vegetable?
