Hi if you reduce the sugar quantity it will effect the overall flavor and texture of the cake but you can reduce the sugar upto 10% without a big impact.

I have also made this cake..almost all of ur ingriendents.except milkpowder and beating egg with seperation...and temperature is 170 ° fan ...the output is top of the layer ia always sticky...whats the reason..but..the cake was baked cmpltely..no underbaked issues. Only sticky top

Sugar should be half of butter? Why sugar 250 grams. It must be too sweet.
For this recipe you need to add this amount of sugar,it’s not too much and too sweet. And sugar not only add sweetness but also helps a lot to get the perfect texture and moisture for the cake.
