If you want the unagi don to be really vegan, you have to use a dashi powder that doesn't contain katsuobushi. There's vegan dashi powder that substitutes shiitake instead of the tuna.
I’m wondering if the mushrooms could be air fried instead of deep fried. Not saying I wouldn’t use oil, but my air fryer is great with tofu and small potatoes. Anyone try this? These recipes look great and I appreciate the advice about trying something you think you hate…eggplant for me!

So if you like the texture of the garlic press potatoes but don't want to spend forever doing tiny pieces through a garlic press, you can buy a potato ricer and do larger amounts of potato at once. I like to be able to learn new recipes and find ways to substitute foods if I am missing an ingredient and this channel has expanded my knowledge of twists to tasty classics. Food should be delicious regardless of diet or preference.
Yesterday I had salt and pepper chicken at a posh Chinese restaurant and they added panko breadcrumbs to the garlic / chilli / scallion mix and it made it extra crunchy and delicious, so that's probably the only thing I would add to those tasty-looking mushroom flowers.
Oh memories of middle school. We had a "who am I" project & I'm pretty sure most people had this in Elementary school where you draw a self portrait & underneath the teacher writes categories for you to fill in. Under food there were lines for fruits, veggies, snacks & main dishes & everyone else's looked the same on the veggie line, it was carrots, cucumber or celery or some kids just wrote gross no vegetables. There isn't a veg I've met that I don't like so mine had broccoli, asparagus, cauliflower, brussel sprouts like I filled that line & everyone thought I was so weird because I actually liked healthy food.
I'm not a funguy people tell me, because I live by the rule: "no fungus among us." ( actually, mushroom texture is what I dislike, so I don't mind a tougher mushroom, like a morel, or something, but the squeeky common mushrooms set my teeth on edge :P )
If you don't like the texture of white buttons and criminis I'd suggest slicing and frying them into mushrooms "chips" they're a good topping without the squishy texture

All 3 look really good! I love Mushrooms - but in Austria, it's a little different. We eat the coated and fried, with creamy Sauce Tartar or as a 'Schwammerlgulasch' - which can be Mushrooms with creamsauce or spicy Sauce. Very often it is Chanterelles with a creamy Sauce (containing onions, cream and parsley) and that is accompanied by a 'Knödel', thats a really big Dumpling made out of stale bread..

My mom was from Liverpool, and would make "mushrooms on toast" - basically mushrooms sauteed in a bit of butter, then take them out of the pan and add in a bit of flour, salt, pepper, chopped parsley, and cook that til the flour isn't raw anymore. Add a bit of cream (or milk if you haven't any cream) to make a smooth sauce. Add the mushrooms back in to warm them up and serve atop hot buttered toast. So delicious and comforting, and something I have not made in years. (I will make this soon - it's a childhood favorite. Thank you for the reminder.) All the best, Christina!

I don't know if pre packaged chicken breading is vegan, but if you use it as a batter for the mushroom, it'll taste like chicken, plus the texture is on point!

i guess you can also use a piping bag and a nozzle and put the potato mixture in it and press it out in the frying pan while cutting it into pieces [like you do while frying churros] and ig it would be way easier..but anyways great video😋😋

Quite creative! I love mushrooms. As a child, I liked straw mushrooms too which is like a mushroom inside a mushroom. My mom would by them in a can.

A potato ricer would work even better than a garlic press! It's perfect for making gnocchi and mashed potatoes.
You can grill the eggplant instead of steaming it to add a smoky flavor but you have to peel it after grilling

I do not like mushrooms or eggplant but both of these would be something I would be willing to try if offered.
