Crispy Roasted Cauliflower Steaks or Nuggets with Gochujang Sauce

- This is another "you'd never know it's keto" type of recipe that has been a huge hit with my family. This recipe is scalable and highly customizable, whether you want to make cauliflower steaks or dip-able nuggets.
NOTE: I'm not calling this a "steak" because I expect you to substitute it for meat. I fully encourage you to eat this on the side of some beef/chicken/fish/pork.

Finally a great looking recipe for cauliflower steaks this is a must try.
Definitely Steve!! I’ll add to my repertoire for a regular fix of cauliflower steaks!! Thanks sooo much for sharing the recipe! I make my own Gochujang that I have ketofied by using sweetener in place of regular sugar. The recipe I followed is Yeung man cooking. He is a vegan and fellow country person, Canadian. His dishes are so artfully prepared. …I like Gochujang sweet…. So I use lots of sweetener.
Hey Steve I saw this recipe and was intrigued enough to give it a try, it was completely awesome, it didn't have the overpowering taste of cauliflower you usually get from cauliflower and the dipping sauce really makes it shine so thank you for this recipe will definitely make again. I had a large head of cauliflower and i got 2 large steaks out of it and a bunch of bigger pieces and some small ones too so I tried an experiment which worked out very well.
I shook the cauliflower nugs in a bag with olive oil to coat the pieces then roasted them on a sheet tray per your recipe. After they were finished I arranged the pieces into a 5x7 well sprayed ceramic baking dish, putting the large pieces on the bottom and then the smaller ones on top of these and covered this with half of the panko/cheese mixture and popped the dish into the oven for about 7 or 8 minute. I took the pan out and inverted it onto a piece of parchment which made a roasted cauliflower loaf that was held together with the melted cheese mixture that dripped down to coat the pieces below. I covered the other half and returned it to the oven. took it out after about 5 minutes and the result was a nice loaf shape which held together and could be cut into meatloaf like slices and served on a plate with the sauce. Just thought I would share this experiment with you

This looks good, I will have to try it. The other night I mixed up a dipping sauce for chicken tenders that might also work well with the cauliflower. Really simple--mayo, gotchu Korean hot sauce, ACV, salt & pepper. It's my new favorite sauce. Keep up the good work...

This looks good. I found a recipe in a Men's Health magazine many moons ago. Roasted curry cauliflower YUMMO so good. This recipe has made my Honey a cauliflower eater now. Next I will have to try it with this coating I beat it will be fabulous. Thanks for all your hard work!!

I've enjoyed roasting cauliflower with ground sea salt and minced onion and garlic (I basically grind them up on everything) so much, it's never occurred to me to do anything else to it. Suppose I'll have to try it. :)
PS: I use something called a FinaMill to grind my salt, pepper and spices. It uses separate interchangeable pods, so it's really quick and easy. I've got eight pods. I don't get compensation for posting this-I just love the product.

Oh my! I love roasted cauliflower too. I sometimes quick cook a head and then slice, coat with mayo and parmesan with a little cheddar pressed on and then bake, Today I was lazy and just thawed out a bag of frozen florets, tossed with Pork King Good panko mixed with curry powder and a drizzle of avocado oil. For me that is a true comfort dish and so quick to make. I will have to try to find that chili paste and make the sauce and do your breading method too. Thanks again for making keto amazing!

Made this tonight and it's a keeper, had to sub chilli garlic sauce for the gochujang since I didn't have any, but it still turned out great.

You can put the crumbled baking paper under running water. It will soften up much better so it follows the baking sheet or other curvy baking form, baking mold nicely.
If I were doing something where a uniform bottom is important (like brownies), that's a good tip.

Really loved the keto breading Idea. I used it with eggplant parmesan and cauliflower fritters. Came out delicious. I am gonna make the keto breading a go to for both. I had bought some of the pork panko from Amazon and for months it was sitting in my pantry simply because I knew that I would have to use an egg drench before coat with the pork panko but then I saw this video!! Way to go Steve!

Wow! From your facial expression in your thumbnail, I guessed it was going to be satisfying! I had a cauliflower steak for $18 from our local boujee lake restaurant, and though it was ok, I’m betting this is going to be 10x better and 85% cheaper!
