The ‘frosting’ is actually chocolate ganache which firms when refrigerated. The jello is prepared cooled slightly and then poured in layers. If it were poured on buttercream frosting it would just mix with the frosting thus creating a mess.

It's mentioned on the screen at 7:26 cocoa butter + pebbles. The cocoa butter creates a skin which doesn't let the colours bleed. I personally haven't used powder colour but you can always make a small batch coat them in cocoa butter and try immersing it in gelatine to see if it works. I've seen others use pre-coloured modelling chocolate without coating them in c butter and there's no bleed.

If you're not using any coloured modelling chocolate you don't need cocoa butter. You can skip the step entirely. Just make sure your choc is set before pouring the jelly in

Jelly doesn’t like room temperature. I would suggest getting the cake ready first then pouring the jelly and setting it overnight in the fridge. Bring it out an hour before it’s ready to be cut so you can also add the rest of the finishing touches to the cake .
May I know why you coat the modelling chocolate in cocoa butter? If we don't coat it, will the modelling chocolate still be ok under the gelatin? I want to do this for my son. 😍
AMAZING creation!! To make the cake, do you need to double or triple your sponge cake recipe? The tins that you use - are they regular size or more like a cheese cake tin? The cakes in your video look taller than from a regular cake tin so I was wondering what you use.

It depends on the heat. If you heat it for lesser time in the microwave it will not gain its shape. If heated too much then the glucose tends to change colour and hardens way too fast. I suggest experimenting first with small amounts as every microwave temperature is different. The ‘water’ is left at room temperature to harden.
