I’ve seen some videos online about putting a cover over your number plate which messes up the recognition of the plate & some spray which u can use.

If you are a criminal, you're going to have fingerprint and passkey to get in. When you watch in on TV, they can encrypt everything, this is nonsense. Usually forensics, use a method, called "Chip off" for phones. Even then, to preserve evidence, isn't easy. Computers, SD cards, Browsing history, emails etc, these are normally fairy easy to do, but phones are another level of security.
