Sweet onions: it’s all about the soil. If the soil is low in sulfur the onions will be sweet. The same variety of onion used for the Vidalia sweet onions can be grown for ordinary yellow onions, but the area around Vidalia, Georgia has the soil that ensures sweetness. I’m not especially fond of sweet onions. If I were growing onions I’d probably add more sulfur to the soil.
in my experience, sweet onions are best raw. Regular onions are better for cooking. Here in Hawaii, we have two areas known for sweet onions. Ewa onions, an area just 4 miles from my home. And the more famous Kula onions, more commonly called Maui onions. But only those grown in Kula, an area of Maui, are the sweet variety.
I grew up in the states, Washington to be exact, and we have a city, Walla Walla, known for its sweet onions! I love seeing this which reminds me so much of my home!!

I could probably do a day of visiting an island devoted to the most pungent vegetable on the planet. However, that onion pudding is my limit as much as I love the cooked version. LOL. The small town of Vidalia, Georgia in the Southeastern United States is also known for it's sweet onions. Make sure you have friends if you order a "Blooming Onion/Awesome Blossom": It's a HUGE onion that's deep-fried and cut into strips that are breaded. You can NOT take on one just by yourself.
